If you don't already follow The Potting Shed now is the time! The temperatures are starting to cool, and that means fall planting season is here!

The farm stand will be open all weekend rain or shine. We have plenty of fresh produce including tomatoes, squash, cucumbers, peaches, peas, watermelons, boiled peanutsand more!

Check us out this Saturday at The Fair Market DFS from 9-2. We will have lots of fresh local produce, jams & jellies, hot boiled peanuts, fresh fried pork rinds and more!

Our featured product for the weekend is our Farm grown Lion's Mane Mushrooms.

Lion's mane mushrooms are easy to recognize by their beautiful white, shaggy “teeth,” which resemble a lion’s mane. Their scientific name is Hericium erinaceus, and they naturally grow on hardwood trees.

Lion’s mane contains beneficial compounds, antioxidants, fiber and beta-glucans. Researchers are studying it for its potential to support:

• Memory, focus and cognitive function
• Brain and nerve health
• Mood and stress management
• Digestive and immune health

Lion’s mane has a mild, savory flavor with a tender, meaty texture. Many people compare it to crab or lobster, making it a wonderful choice for meatless and seafood-inspired dishes. It also absorbs butter, herbs and seasonings beautifully!

Cooking tip: Tear or slice the mushroom and place it in a dry skillet first. Allow some of its natural moisture to cook away before adding butter or oil. Cook until golden brown around the edges. Lion’s mane should always be cooked before eating.

Try lion’s mane in:

Lion’s Mane “Crab” Cakes
Tear it into small pieces and combine with egg, breadcrumbs, mayonnaise, mustard and Old Bay seasoning.

Lion’s Mane Mushroom “Steaks”
Slice into thick pieces, press and sear in butter with garlic, salt, pepper and fresh herbs.

Crispy Lion’s Mane Tacos
Season with smoked paprika, cumin and garlic, then sauté until crisp and serve with slaw and lime sauce.

Creamy Lion’s Mane Pasta
Brown the mushrooms and add them to a creamy garlic-Parmesan sauce.

Lion’s Mane Soup
Add pieces to cream-based mushroom soup, vegetable soup or ramen.

Breakfast Scramble
Sauté with onions and peppers, then fold into scrambled eggs or an omelet.

Pulled Lion’s Mane Sandwich
Shred, season with barbecue sauce and pile onto a toasted bun with coleslaw.

Fun fact: Lion’s mane doesn’t have the familiar cap-and-stem shape of most mushrooms. Its long hanging spines are where its spores are produced!

Fresh Gourmet Mushrooms at Breathe Easy Farm This Weekend!

We will have three delicious varieties of locally grown mushrooms at The Breathe Easy Farm Stand this weekend: Phoenix Oyster, Pink Oyster, and Lion’s Mane.

PHOENIX OYSTER MUSHROOMS
Phoenix oysters have a mild, savory flavor and a tender, velvety texture. They are wonderfully versatile—sauté them with butter and garlic, add them to pasta or stir-fries, use them on pizza, or roast them until the edges are golden and crisp.

Like other oyster mushrooms, they provide fiber, protein, B vitamins, minerals, antioxidants, and naturally occurring beta-glucans—compounds being studied for their potential role in supporting immune, metabolic, and heart health.

PINK OYSTER MUSHROOMS
These beautiful tropical mushrooms have a firmer, meatier texture and a rich, savory flavor that is sometimes compared to ham or bacon when browned. They are excellent fried, roasted, grilled, or used in tacos, sandwiches, pasta, and mushroom jerky. Their bright pink color fades as they cook, but their flavor becomes even richer.

Pink oysters also contain fiber, protein, vitamins, minerals, antioxidants, and beta-glucans. They make a colorful, nutritious addition to plant-forward meals.

LION’S MANE MUSHROOMS
Lion’s Mane has a tender, shreddable texture and a mild flavor often compared to crab or lobster. Slice it into “steaks,” pull it apart for mushroom crab cakes, sauté it in butter, or use it in seafood-style dishes.

Lion’s Mane is best known as a culinary mushroom that is also being researched for compounds that may support brain and nerve health. Early human studies have shown promising results related to memory, focus, mood, and stress, although more research is still needed. It also provides fiber, antioxidants, and other naturally occurring beneficial compounds.
