Colorado Springs & COS-adjacent folks!

We will have a booth at Pumpkins in the Park in Old Colorado City, *this Saturday* 10/24! If you'd like to pre-order and pick up your favorite flavors, please place an order on our website by EOD Thursday and choose "free pickup" for shipping. We're not bringing items like mozzarella that aren't easy to sample so you'll have to pre-order if you want them.

We're also planning to have (vegan) treats for trick or treaters and probably also some baked goods for sale. We're so excited to meet everyone! 🎃

Good morning!! Can’t wait to see folks *tonight* at the vegan market at Oskar Blues in Longmont! Stoked to hang out with amazing vendors, vegans, and veg-friendly peeps. We’re pulling out a few flavors we don’t normally bring to markets - smoked Gouda, cheddar, and mozz, plus seasonal Diablo (roasted garlic & chipotle) and of course all the usual faves. Leevers restock today!!

Took a peek at the cheese aisle earlier and we were wiped out! Holy moly. Huge thanks to everyone for the love and support - we really, really appreciate you 🥰 We're loaded back up for the week with cheddar, mozz, parm, caramelized garlic, garlic feta, queso fresco, pepper jack, and extra sharp white.

Upgrade your next pasta salad with our vegan Parmesan! Its savory, nutty profile brings a boost of umami, cuts sharp vinaigrettes, and adds a rich, satisfying finish to every bite. 🤤

Salad: 8 oz chickpea rotini, 1/2 c sliced cherry tomatoes, 1.5 c roasted squash (I used tromboncino, zucchini also works!), 4 leaves finely chopped kale, 1 diced red bell pepper, 1/2 diced red onion, 4 oz can sliced black olives (drained), a few handfuls of chopped parsley and basil, 1/2 c finely diced or shredded Peaceful Rebel vegan Parmesan.

Dressing: 1/2 cup red w**e vinegar, 1/3 cup EVOO, 1/2 tsp salt, 1/2 tsp pepper, 2 tsp dried oregano, 1 Tbs Dijon mustard.

Best if allowed to sit at least 30 minutes, but longer (up to overnight) is even better!
