Upgrade your next pasta salad with our vegan Parmesan! Its savory, nutty profile brings a boost of umami, cuts sharp vinaigrettes, and adds a rich, satisfying finish to every bite. 🤤

Salad: 8 oz chickpea rotini, 1/2 c sliced cherry tomatoes, 1.5 c roasted squash (I used tromboncino, zucchini also works!), 4 leaves finely chopped kale, 1 diced red bell pepper, 1/2 diced red onion, 4 oz can sliced black olives (drained), a few handfuls of chopped parsley and basil, 1/2 c finely diced or shredded Peaceful Rebel vegan Parmesan.

Dressing: 1/2 cup red wine vinegar, 1/3 cup EVOO, 1/2 tsp salt, 1/2 tsp pepper, 2 tsp dried oregano, 1 Tbs Dijon mustard.

Best if allowed to sit at least 30 minutes, but longer (up to overnight) is even better!

Re-up at Leevers this week! Lots of flavors - caramelized garlic, pepper jack, garlic feta, mozzarella, Parmesan, extra sharp white, sharp cheddar, and queso fresco! All made fresh this past Sunday in our new Boulder kitchen!

A lot of folks ask us at events what to make with our cheeses - this potato hash is a delicious way to showcase our sharp cheddar! It's great for breakfast, dinner, or wrapped up in a burrito. Don't forget the avocado! 🥰

Leevers restock today - extra sharp white, cheddar, mozz, and parm! We also restocked N**e Foods with herbed feta and blue cheese earlier this week.

Other fun news:

-We're working on adding some cheese boxes to our lineup. There's one up now on the website with more to come soon! It's been really fun picking out the different ~*~accoutrements~*~....a lot of taste testing and discovering cool brands. They're basically what I always wish to see in a vegan charcuterie box.

-We'll have booths at both the Tangerine Sky market in Arvada and CO Day Bazaar in Denver on 8/1 (on the same day, eek!) 😵‍ Since it's going to be a long, hot day and a lot of people aren't going to want to walk around with hunks of cheese we're going to try out charcuterie snack packs at the Denver event - a few pieces of different cheeses, crackers, and some fruit and veg to munch on. Let us know if you try one!

-We've got lots more local events coming up - Vegan Markets in Longmont, a wine fest in RiNo, and a halloween fair in CO Springs. I'd like to play around with some limited run flavors at the Vegan Markets. I have so many ideas!

Leevers drop today! Pepper jack, extra sharp white, cheddar, mozz, and lots of caramelized garlic. We received some requests for parm and herbed feta so those will most likely appear in the next drop in a couple weeks.

Other fun news - we do a lot of shipments to folks in CO Springs so we are looking into some shops there that will carry us for y’all. Our distributor doesn’t serve COS so we are trying to connect with one. We’ll also be moving to a bigger kitchen pretty soon and that means we’ll be able to make more cheese and hopefully expand our offerings!

Been waiting until there was an event page to share and here it is!

We're going to be handing out tons of free samples at Leevers Locavore Localpalooza on 6/20 (that's next Saturday!). This is my first time attending and it looks like it's going to be a blast, with lots of other vendors sampling their goodies (hopefully many are vegan!), live music, and other entertainment. Hope to see ya there! 🥰 🧀
