Operating from Shady Maple Farm, Philip brings a unique, modern perspective to an old-world setting, bridging two distinct culinary worlds to create exceptional aged cheeses. Philip’s journey into the world of dairy did not follow a conventional path. Fifteen years ago, his curiosity was sparked by a simple book on how to make yogurt. He successfully made exactly one batch of yogurt before turning the page to explore aged cheese recipes. Hooked instantly by the science and artistry of cheese maturation, he never looked back. Today, Philip combines years of self-taught expertise, rigorous experimentation, and the high-quality, pristine milk sourced directly from Shady Maple Farm. His dedication to the slow, patient process of aging cheese results in rich flavors and textures that tell a story of passion, tradition, and non-stop dedication to the craft.
