Adaptogenic Sipping Broth
This is my favorite flavorful mushroom & herb broths for building immunity, reducing inflammation, & serving as a rich base for lots of soups and stews.
My favorite way is to have it is as a drinking broth in the morning with a spoonful of miso stirred in to the mix. This a broth you can drink throughout the day to stay healthy this winter (and all year).
We were fortunate to have an incredible porcini year last year and still have a lot in our pantry, but use any mushrooms you have available!
Make it on your stovetop or use a crockpot or slow cooker; this is an easy way to fortify your system with a weekly batch of minerals, nutrients & adaptogenic mushrooms & herbs.
Ingredients:
* 8-12 Cups of Water
* 1 Large Onion, Chopped in Half
* 2 Carrots, Chopped
* 1 Stalk of Celery Chopped
* 3 Large strips of Kombu, Alaria, or Digitata Kelp Seaweed (any seaweed is great-use what you have availble @ 1-3 Cups)
* 1-2 Cups Cup Dried or Fresh Mushrooms- Shiitake, Porcini, Reishi, Lions Mane
* 1/4 Cup Calendula Flowers
* 1 Cup Loose Nettle Leaf
* 3 Tablespoons Fresh Ginger, chopped
* 4 Cloves Garlic, crushed
* 1-2 Tablespoons Fresh Turmeric Root or add 1 Tablespoon Powdered
* Optional but recommended: 1 Tablespoon each Burdock Root, Dandelion Root & Astragalus
*Roasted winter squash (optional but tastes delicious!)
* Serve in a mug and mix in a Tablespoon Miso of your choice
Combine all ingredients in a large pot and simmer on very low heat/flame for 3-4 hours. Strain and press as much goodness as possible through a mesh sieve.
Salt to taste and add a squeeze of lemon or a tablespoon of Miso-don't simmer or boil miso as it is alive!
If using a combination of mushrooms, know that certain mushrooms have a more bitter flavor, like Reishi, so add a smaller amount if you are sensitive to bitter flavors.
🌿Many of the dried herbs, flowers, and mushrooms can be purchased online in bulk. (If you aren't able to find all the ingredients, make a broth with what you have available)
🌿Save scraps of veggies in your freezer to add to the pot-squash, carrot tops, onion skins, etc.
Enjoy with a spoonful of miso stirred in and/or a squeeze of lemon!
