Seared Shrimp Stuffed Avocados

🧺 Ingredients
Shrimp Filling
12 oz (340 g) large shrimp, peeled & deveined
1 tbsp olive oil
2 cloves garlic, minced
½ tsp smoked paprika
½ tsp chili flakes (optional)
Salt & black pepper, to taste
Zest of ½ lemon + 1 tbsp lemon juice
Avocados
2 ripe avocados, halved and pitted
Mediterranean Mix-ins
¼ cup cherry tomatoes, finely chopped
2 tbsp red onion, finely diced
2 tbsp fresh parsley or cilantro, chopped
2 tbsp crumbled feta cheese (optional but recommended)
Optional Sauce (Quick Yogurt Drizzle)
¼ cup Greek yogurt
1 tbsp lemon juice
1 tsp olive oil
Pinch of salt
👩🍳 Instructions
1️⃣ Season the shrimp
Pat shrimp dry. Toss with olive oil, garlic, paprika, chili flakes, salt, pepper, lemon zest, and lemon juice.
2️⃣ Sear the shrimp
Heat a skillet over medium-high heat.
Cook shrimp 2–3 minutes per side until pink, slightly crispy, and cooked through.
Remove and roughly chop.
3️⃣ Mix the filling
In a bowl, combine chopped shrimp with tomatoes, red onion, herbs, and feta.
4️⃣ Prepare the avocados
Scoop out a little avocado flesh to widen the cavity (optional).
Lightly season with salt and lemon juice.
5️⃣ Stuff & finish
Fill avocado halves generously with the shrimp mixture.
6️⃣ Add sauce (optional)
Whisk yogurt drizzle ingredients and spoon over the top.

Serve over mixed greens for a full meal
Add cucumber or olives for extra Mediterranean flavor
Great as an appetizer, lunch, or light dinner
