I just wanted to share this awesome quick dinner recipe with you guys! As we were eating these meatballs for dinner (again!) I said, "This would have been a Fairhope Foodie favorite back in the day!" I didn't want to leave you guys out, so I'm sharing quickly here. I hope you guys enjoy it as much as we do!

Asian Glazed Meatballs:
(Serve with shelled edamame and brown rice)

40 frozen meatballs
1/4 cup hoisin sauce
1 TB Asian rice vinegar
2 tsp brown sugar
1/2 tsp garlic powder
1/4 tsp ginger powder
Optional: toasted sesame seeds and green onions for garnish

1. Bake meatballs according to package directions
2. Add all other ingredients to a medium saucepan and heat until warm
3. Add cooked meatballs to saucepan with the sauce and toss to coat well
4. Serve over brown rice with shelled edamame
5. Garnish with sesame seeds and green onions if desired.

Baked Oatmeal MUFFINS! This is a new favorite of mine. I turned this great recipe into an awesome on-the-go breakfast. I omitted the butter and substituted Craisins for the raisins and walnuts. I mixed mine the night before and let it soak in the fridge overnight. In the morning, spray a muffin tin and divide the batter among 10 cups, bake and then eat! If you're doing WW, each muffin is only 3 points! Great with a banana for a full breakfast!

Try baked oatmeal for a unexpected morning treat. It's a mix between an oatmeal bar and traditional creamy breakfast oatmeal.

New Dinner Favorite! Tex-Mex Chicken:
Lay chicken breast on 12" sheet of foil, season with S & P. Top with 3/4 cup (total) rinsed black beans and corn and 1/4 cup salsa. Wrap foil up in a pouch. Bake in 450 degree oven for about 20 minutes. Serve with brown rice! YUMMY!!

Made this AGAIN. Such a favorite! Just thought I would remind you guys ;) Lately, I've added a package of cooked cheese tortellini at the end. Rounds it out nicely! I also serve it with the Zucchini Corn Muffins. Have a great weekend!

I can't tell you how thankful I am for this recipe!!!!!!! I made it tonight before church and it was FABULOUS!!!! I used tomatoes with jalapenos and pepper jack cheese (we like spicy food) and it completely set it off :o) Thank you again and I can't wait to try some of the recipes that you have i

Hey guys!! I was just thinking about some Thanksgiving stuff and I didn't want you guys to forget about this AWESOME sweet potato casserole that you have to put on the table this year! I can't wait to eat it again...

When I made mine, I assembled it the the night before I needed it and topped the next day, just like you were planning on doing. Turned out fabulous. Won't go back to marshmallow topped potatoes again!
