Another installment of connecting people with where their food comes from.

Today we’re talking pork ribs—because “ribs” aren’t all the same, and where they come from on the pig makes a difference in how they cook.

Baby back ribs come from higher on the rib cage, along the loin near the backbone. They’re smaller, curved, leaner and usually more tender. Because they have less fat and connective tissue, they generally cook faster and are great smoked, grilled, or cooked low and slow in the oven.

Spare ribs come from farther down the rib cage toward the belly. They’re larger, flatter and fattier, with more connective tissue—which means BIG flavor. Give them time. Low-and-slow cooking lets that fat render and the connective tissue soften.

St. Louis-style ribs are actually spare ribs that have been trimmed into a neat, rectangular rack by removing the rib tips and cartilage. They cook similarly to spare ribs and are especially nice for smoking because their uniform shape helps them cook evenly.

Rib tips are the flavorful pieces trimmed from spare ribs when making a St. Louis rack. They contain more cartilage, fat and connective tissue, so they shine with slow cooking or smoking.

And then there are country-style ribs, which can be confusing because they often aren’t technically ribs at all. They’re usually cut from the shoulder/blade end near the loin and have a lot more meat than a traditional rib. They’re fantastic braised, smoked, grilled slowly, or cooked until fork-tender.

The basic rule?

Leaner ribs = a little less time.
Fattier, tougher ribs = low, slow, and patient.

The ribs in our dinner picture got a simple dry rub and a slow trip through the oven—and that’s really all good pork needs.

Buying farm-to-table isn’t only about knowing who raised your food. We want you to know what part of the animal you’re buying, why different cuts behave differently, and how to turn them into something your family actually wants to eat.

Recently, we asked you guys: What do you want to see at ROOTED that we don’t already have?

And overwhelmingly, the answer was:

So… we got in the kitchen. 👩🏼‍🍳🔥

We’re bringing back some of our local meal specials and filling the cooler with meals made right here at ROOTED using ingredients from the store and our local farmers.

Here’s what you’ll find in the cooler this week:

🥩 LAAB
A Thai-inspired beef dish made with SK Prime Pastures ground beef and Primal seasoning, absolutely loaded with lime, garlic and BIG flavor. Each container has over ½ pound of food — about .3 lb of beef + .3 lb of organic brown rice.

And my favorite way to eat it? Grab some romaine lettuce and use the leaves as little LAAB taco shells. 🌮

🍗 DECONSTRUCTED EGG ROLL
Made with SK Prime Pastures ground chicken, cabbage, carrot, celery, onion, garlic, turmeric, salt and our pepper blend.

½ pound of nutrient-dense food in every container, with all the flavor of an egg roll without the wrapper.

🌱 VEGETARIAN PASTA BAKE
We didn’t forget our vegetarians!

We used Barilla Gluten-Free Pasta, tomatoes from Saxons, fresh Red Moon Farm zucchini, garlic, fresh basil from the garden and Boursin herb cheese to make a simple, hearty pasta bake.

Again — over ½ pound in every container.

🍗 SK PRIME PASTURES LEG QUARTERS
We also baked up a batch of SK Prime leg quarters. You can grab them individually to add some extra protein to your meal or pair one with the pasta bake or another side.

🌶️ SPICY CABBAGE
And yes… it is actually SPICY. 😂

Over ½ pound per container, cooked with garlic and Thai chili paste. This one is a seriously flavorful side for just about anything.

And here’s the best part:
Every one of these dishes was made using ingredients you can find right here at ROOTED.

We’re trying to make eating local, nutrient-dense food a little easier — because sometimes you want to eat well without having to cook an entire meal from scratch.

Last week it was beef and lamb. Today, it’s pork.

Another trip to the processor, another van packed full, and another reminder of just how much goes into keeping our freezers stocked with food we’re proud to put on your table.

These pigs were raised by us, cared for by us, and fed the way we believe they should be — with non-GMO, corn-free, soy-free, flaxseed-free feed, and no vaccines, antibiotics, or added hormones.

There’s something pretty special about loading up boxes of finished pork and knowing exactly where that food came from, how those animals lived, and what went into raising them.

From piglets at the feed trough to boxes in the back of the van — this is farm to table in the most literal sense.

And now it’s time to get it all home, inventoried, and into the freezer.

You hear us talk a lot about restocking our retail partners, but there’s another SK Prime Pastures location we probably don’t talk about nearly enough — Living Holistic in The Woodlands.

Living Holistic is a Christ-centered holistic wellness community built around caring for the whole person — spirit, soul and body. Their community brings together natural health, Biblical wellness, credentialed practitioners, an apothecary, education, discipleship and other resources, all grounded in their Christian faith.

This location works a little differently than our retail stores. You place your order directly through our website, choose Living Holistic/The Woodlands pickup, and we deliver your order to our freezer there. Once it arrives, you can pick it up during Living Holistic’s business hours at your convenience.

It’s a simple way to get truly pasture-raised, farm-to-table meat without making the drive all the way out to the farm.

We’re incredibly blessed to be a small part of what Living Holistic is building — a Christ-centered community helping families pursue wellness while keeping Him at the center of it all.
