BCR is launching a rotating monthly vendor schedule and we have 4 open spots to fill! Each weekend features a dedicated hot food vendor— think BBQ weekends, taco weekends, and everything in between! Giving you a reliable recurring spot and giving our shoppers something to look forward to every single week.

Hot food is our focus, but we’d also love to hear from coffee vendors, bakers, and other specialty food creators ready to join the family.

May has arrived! The ranch (& market) is absolutely bursting with flavor, color, and two fruits that deserve to be the star of your table right now. Our strawberries are at peak sweetness and our Amber Crest peaches are juicy, golden, and going fast.

SautĂŠed Carrots and Green Onions

Ingredients:

1 bag carrots approximately 8 ( Orange or Rainbow )
1 bunch green onion
1 tablespoon olive oil or vegan butter
salt and pepper to taste

Instructions

Clean and peel carrots. Slice carrots into even 1/4″ rounds.
Clean and dice green onions. Set to the side.
Using a large bowl, prepare an ice bath. Set to the side.
Bring a large pot of salted water to a rolling boil. Add the carrots and parboil until partly cooked approximately 3 to 5 minutes. Careful not to overcook.
Once the carrots are partly cooked transfer them into the ice bath. Cool the carrots completely, remove from water and pat dry.
On medium-high heat, heat a large saute pan melt butter or oil. Once the butter or oil is hot add in the dried carrots. Cook until lightly browned on both sides, approximately 3 to 5 minutes. Stir in the green onions and heat for an additional minute. Salt and pepper to taste.
Place sauteed carrots and green onions into a shallow serving dish. Serve hot.
OPTIONAL:
If you prefer to roast; preheat a 425-degree oven. Place parboiled carrots into a bowl and drizzle with olive oil salt and pepper. Transfer to a foil or parchment-lined baking sheet. Cook for 6-8 minutes. Be careful to not overcook.

Welcome to April at the

BCR Farmer's Market

April has officially arrived at Bautista Creek Ranches— and honestly? The fields are showing off. Between the sweet crunch of fresh carrots, the bold bite of radishes, and rows of gorgeous romaine and bibb lettuce waving in the breeze, spring is in full swing and we couldn't be more excited to share it with you.

Oh, and did we mention… peaches are here. 🍑 That's right— our first peaches of the season have arrived, and they are everything you've been waiting for. Keep an eye on our socials for the big announcement!

Spring Roasted Beet & Strawberry Salad with Honey-Grapefruit Vinaigrette

Serves 4 | Ready in about 45 minutes

This salad is the perfect April dish — earthy beets, juicy strawberries, and a bright citrus dressing that ties it all together. It's the kind of thing that looks fancy but comes together effortlessly.

You'll need:

• 3–4 medium beets, trimmed and scrubbed
• 1 cup fresh strawberries, hulled and halved
• 4 cups green romaine or bibb lettuce, torn
• ¼ red onion, thinly sliced
• Crumbled goat cheese or feta (optional but highly recommended)

For the vinaigrette:

• 3 tbsp fresh grapefruit juice
• 1 tbsp honey
• 2 tbsp olive oil
• Salt & pepper to taste

Directions:
• Roast beets at 400°F, wrapped in foil, for 35–40 minutes until tender. Let cool, then peel and slice into wedges.
• Whisk together grapefruit juice, honey, olive oil, salt, and pepper.
• Arrange lettuce on a platter. Top with beets, strawberries, and red onion.
• Drizzle with vinaigrette, finish with cheese if using, and serve immediately.

There’s a moment every spring we look forward to more than anything else — the day the first peach is ready. 🍑

This week, that day arrived. Say hello to Amber Crest peaches — our newest arrival and quite possibly the juiciest, sweetest peach you’ll taste all season.

What makes our peaches different? They are picked once sugars have peaked and when they’re bursting with flavor, these don’t compare to store bought fruit.
