1 c. whole milk
6 sprigs thyme
2 dried bay leaves

Dessert Recipe: Chocolate Tarte with Blood Orange Rose Petal Marmalade

Rich, silky chocolate with a citrus-floral twist. This decadent tart starts with a buttery crust, filled with smooth chocolate ganache infused with our Blood Orange Rose Petal Marmalade, and finished with a glossy chocolate glaze.

FOR THE CRUST:
1 stick (1⁄2 cup) unsalted butter, at room temperature
1⁄4 cup + 2 tablespoons sugar
1⁄4 teaspoon salt
1 1⁄4 cups all-purpose flour, spooned into measuring cup and leveled-off
1 large egg yolk

FOR THE CHOCOLATE FILLING:
8 ounces semisweet chocolate, best quality such as Ghiradelli or Guittard, chopped or broken
into small pieces
11⁄4 cups heavy cream
2 tablespoons sugar
2 tbsp Akaka’s blood orange rose petal marmalade
1⁄4 teaspoon salt
2 large eggs, at room temperature
1 teaspoon vanilla extract

FOR THE CHOCOLATE GLAZE:
3 tablespoons heavy cream
1 tablespoon light corn syrup
2 ounces semisweet chocolate, best quality such as Ghiradelli or Guittard, chopped or broken
into small pieces
1 tablespoon hot water

Side Dish Recipe: Zaatar & Cauliflower Tahini Sauce with Orange Ginger Preserve

Roasted cauliflower steaks seasoned with zaatar, served with a fresh herb tahini sauce and a hint of our Orange Ginger Preserve. A simple, flavorful dish that's become a favorite in our kitchen.

Ingredients:

1 whole cauliflower- leaves trimmed ( leave the stem intact)- sliced into 1/2 inch thick steaks
1 tablespoon olive oil
3–4 teaspoons zaatar spice ( a blend of cumin, coriander, sumac, sesame seeds)
salt and pepper to taste
1/2 cup water
3 tablespoons lemon juice
3 tablespoons olive oil
1-2 fat garlic cloves
3/4 cup fresh herbs (cilantro, Italian parsley, dill or basil or a combo!) tiny stems ok!
2–3 slices jalapeno (optional)
1 tbsp Akaka Falls Farm Orange Ginger Preserve
1/2-1 teaspoon salt, start with 1/2, add more to taste
1/2 cup tahini paste
