New sauce who dis? Calling this “Tropical Sunburn”. This was fermented with Khang Starr Lemon Starrburst, Fatalii gold, Aji lemon, 7 pot mustard, and sugar rush peach (from ) peppers. Pineapple added post ferment to add that subtle sweet/citrus note to complement the heat. Definitely the hottest sauce I’ve made yet!

Playing around with some packaging variations (still using glass for the time being).
Smoked Big Red is bottled up and ready to go! This uses red jalapenos from , cayennes, onion and garlic. Ingredients were smoked prior to fermenting and vinegar age. Great subtle smoke, great mid level heat, and an all around great sauce. These will be available this weekend at so come buy and grab some!

It’s officially “trash” season. If you’re from Texas you’re well acquainted with this holiday treat comprised of mixed chex, nuts, pretzels, and other items depending on who’s making it.
We have been offering this the past two years and have stepped it up a notch using our hot sauce and our seasonings as well as smoking it to add a depth of flavor.
From left to right -
Smoked ranch trash : with mixed chex, honey roasted peanuts, pretzels, and Pirates b***y with ranch seasoning.

The original Smoked Trash - mixed chex, honey roasted peanuts, pretzels, Cheerios, and bugles.

Smoked Thai Trash - which uses our Thai seasoning made spent mash and assorted spices from our Thai hot sauce!

Doing mash ferments is probably my favorite. The mash is always so aesthetically pleasing at the start. This small test batch has tomatillos, mixed hot peppers, and bells from our farm with jalapeños and serranos from my cousins farm, onion, carrot, and garlic all smoked prior to mash.
