Fresh ingredients make all the difference.

One of the best parts of the farmers market is being surrounded by incredible local farmers and producers. From peak-season vegetables to locally raised meats, we source as much as we can right here from the people who grow and raise it.

The result? Food that’s fresher, tastes better, and truly reflects the season. Every week brings something new, and we’re grateful for the amazing farm partners who help make what we do possible.

Every detail matters. Locally sourced wood, hand split right before going into the smoker. You can literally smell fresh fruit right after you split it open. No pellets or dead wood chips with no flavor. Only the best here.

There's something special about caramelized onions. Not those quick sautéed ones, but truly slow caramelized, melt in your mouth, amazing ones.
3-4 hours later, you get this aromatic amazing result.
* Natural sugars have concentrated and browned.
* The texture becomes spreadable, almost like onion marmalade.
* You get a much deeper umami flavor.
This is just one of the many components that make our tamales over the top.
If you haven't tried it, we will be running it a couple more weeks until we switch up our special

Heirloom masa is filled with huitlacoche, slow caramelized onions, and cheese. Steamed in banana leaves, then finished with a Black Garlic crema, local cheese, pickled red onions, and herbs. Only available at ETICA the Lafayette Farmers Market 8-12:30
