It's hard to imagine improving upon honey .. but we are going to try something new. 'Creamed honey', based on a carefully controlled process to form very fine crystals, retains the taste and nutrition but is much more 'spreadable'. We intend to introduce creamed honey in the near future. The creaming process also opens the door to introducing specialized flavors .. some on the table are 'lemon honey', 'mint honey' and (hot) 'Chili honey' ... but we'd welcome your suggestions!

At yesterday's Asian Lunar Festival, we were surprised to learn how many people seek out larger volumes ... quart jars, rather than the ubiquitous 1 lb invertible jars that are so convenient .. we keep a few 1 qt Mason jars in stock for direct sales, but look to Orient Mart for this product to reach the shelves soon. Btw, remember that it is NOT true that "a pint is a pound, the world around" .. which only reflects water-based products. Honey is 12 lb per gallon, so 3 lb per quart.
