WHAT’S YOUR FAVORITE VEGGIE TO TOSS IN?
Spring Rainbow Veggie Pasta Primavera
Ingredients:
12 oz rotini or fusilli pasta
½ cup cherry tomatoes, halved
1 small zucchini, chopped
½ cup broccoli florets
½ cup green peas (frozen or fresh)
½ cup red or yellow bell pepper, chopped
¼ cup grated Parmesan
2 tbsp olive oil
1 garlic clove, minced
Salt, black pepper, fresh basil or parsley
Directions:
Boil pasta in salted water. Add broccoli & peas in last 2–3 min. Drain.
In a large skillet, heat olive oil. Sauté garlic and all chopped veggies 5–6 min.
Add cooked pasta to skillet, toss well with veggies and Parmesan.
Season to taste and finish with herbs and more cheese.
