Get what you need plastic-free with a refill of our Arborio rice and fresh farmers market produce.

β†’ 1 bunch asparagus, trimmed and chopped into Β½ inch pieces
β†’ 3 tbsp olive oil
β†’ 1 medium leek, sliced thin and separated
β†’ 6 green onions, sliced thin
β†’ 1 tsp sea salt
β†’ 1 cup Arborio rice
β†’ 1 cup dry white wine
β†’ 4 cups no chicken broth (5 tbsp no chicken broth powder + 4 cups water)
β†’ 1 cup fresh green peas
β†’ Β½ cup fresh parsley, chopped
β†’ Β½ cup fresh chives, chopped
β†’ 1 tbsp lemon zest
β†’ Β½ cup Parmesan cheese, finely grated

When life gives you lemons reuse the peels 3 ways πŸ‹

✧ Citrus Salt:

β†’ With a microplane, mix 1:1 lemon zest and salt.
β†’ Rub between your fingers or palms to blend and break up lemon zest.
β†’ Allow to dry in open air and store airtight for 1 year.

✧ Lemon Vinegar Cleaner:

β†’ Fill a jar with lemon peels.
β†’ Pour enough vinegar to cover the peels.
β†’ Cover with a lid and store for 2 weeks.
β†’ Strain through a cloth lined sieve and squeeze out as much liquid as possible.
β†’ Pour into a spray bottle and use full strength or diluted with water.

✧ Loose Leaf Tea Mix:

β†’ With a vegetable peeler, peel a lemon aiming for just the yellow zest. Scrape off any bitter white pith with a knife.
β†’ Air dry in a well ventilated area for 3-5 days until they snap easily, or in the oven on a parchment lined tray at the lowest setting, approximately 170F for 1.5 - 2.5 hours.
β†’ Make sure they are fully dry.
β†’ Once crisp, chop the peels into small bits and mix them into your favorite tea. Store airtight for up to 1 year.

(Use organic lemons and give them a bath first with the Fruit & Veg Wash)

Leave nothing un-tahinied. This week’s recipe is a Honey Tahini Kale Salad inspired by our fresh farmers market produce along with some refill essentials.

β†’ 3 cups kale, chopped small
β†’ 2 oranges, segmented
β†’ ΒΎ cup roasted red peppers, sliced
β†’ Β½ cup garlic stuffed olives
β†’ ΒΎ cup dates, chopped
β†’ 1 cup walnuts, toasted
Dressing:
β†’ Β½ cup olive oil
β†’ 2 tbsp tahini
β†’ 1 tbsp honey
β†’ 2 cloves garlic
β†’ Juice of 1 large lemon
β†’ 1 tsp salt

β†’ To make the dressing, combine all ingredients and blend or whisk until creamy.
β†’ In a large bowl, toss the kale with a few tablespoons of dressing and mix for 30 seconds to soften.
β†’ Add roasted red peppers, olives, dates, and half the walnuts. Drizzle the rest of the dressing and mix.
β†’ Top with remaining walnuts, oranges, and lemon zest.

Seeing green? ☘️ Here’s a fresh Spring Green White Bean Pasta to get your greens in for dinner with minimal prep and cleanup.

β†’ 8oz sea shell semolina pasta, or 1 full 32 oz re_ jar
β†’ 1 cup cooked cannellini beans, about Β½ cup dried
β†’ 1 cup spinach
β†’ Β½ cup zucchini, chopped
β†’ 1 small carrot, chopped
β†’ 3 cloves garlic
β†’ 2 tbsp olive oil
β†’ zest and juice of Β½ lemon
β†’ Β½ tsp salt
β†’ Β½-ΒΎ cup reserved pasta water

β†’ Bring 3 quarts of water to a boil, then add salt and pasta and stir. Cook for 8-9 minutes until desired tenderness, stirring occasionally.
β†’ Before draining, reserve ΒΎ cup pasta water. Drain pasta and return it to the same pot.
β†’ In a blender, combine white beans, spinach, zucchini, carrot, garlic, olive oil, lemon zest + juice, salt + pepper, and Β½ cup pasta water. Blend until smooth and creamy. Add more pasta water as needed to thin.
β†’ Pour the sauce directly into the pot with the pasta and warm gently for 1-2 minutes, stirring until coated.
