Breakfast Bowl with Scrambled Eggs, Avocado, Mushrooms, and Broccoli:
📝 Ingredients
For the Scrambled Eggs:
• 3 large eggs
• 1–2 tbsp milk or cream (optional, for creamier texture)
• Salt and pepper to taste
• 1 tsp butter or oil
For the Vegetables:
• 1/2 cup broccoli florets
• 1/2 cup sliced mushrooms (e.g., cremini or button)
• 1/2 tbsp olive oil or butter
• Salt and pepper to taste
Toppings:
• 1/2 ripe avocado, sliced
• Fresh herbs (chives, parsley, or cilantro), finely chopped
• Extra black pepper (for garnish)
🍳 Instructions
1. Cook the Broccoli:
• Bring a small pot of water to boil.
• Add the broccoli florets and cook for about 2 minutes (until bright green and slightly tender).
• Drain and rinse under cold water to stop cooking. Set aside.
2. Sauté the Mushrooms:
• Heat olive oil or butter in a pan over medium heat.
• Add sliced mushrooms, season with salt and pepper, and cook for about 5–7 minutes until browned and soft.
• Set aside.
3. Scramble the Eggs:
• Crack the eggs into a bowl, add milk or cream if using, and whisk well.
• Heat a nonstick pan over medium-low heat and melt the butter.
• Pour in the eggs and cook gently, stirring slowly until soft curds form. Season with salt and pepper.
• Remove from heat while still slightly creamy.
4. Assemble the Bowl:
• Arrange the scrambled eggs, mushrooms, broccoli, and sliced avocado in a bowl.
• Garnish with freshly ground black pepper and chopped herbs.
