Well, hey đź‘‹ there! It has been a while!

In the last few posts I have shared about the pivot of Pacheco Beef and what that will look like, and today, I made the official last move of closing the retail side of Pacheco Beef. I turned off our e-commerce website. I have been working on something really fun for Pacheco Beef and our original food blog, Cooking with the Cowboy. The food blog is getting a fresh look and will be the place to reserve a Pacheco Beef Share! Until then, we are still working to raise, finish, and sell our handcrafted beef; it just looks a little different than it did last year.

A little of this story of why we are doing it differently…last year, I hit a bottom. The beef shop was slow; I had very little foot traffic and was burned out trying to make it work. However, I was finding so much joy in helping my beef share customers fill out cut cards for their half a beef and knowing that when they reached into their freezer to ground beef or a steak, they would be nourishing their family with our beef, a product that we have put the time in effort in creating for them. It is so dang rewarding. So after a tearful conversation with Arturo going down the road, we decided it best to close the retail side of Pacheco Beef and focus on selling beef shares, as well as to refocus our energy on sharing recipes, our love for cooking and creating nourishing beef dishes for our family and yours!

Y'all...we are going to be open for Shop Small Alma, Saturday, November 30th! This is one of my most favorite times of the year in our small town. The Beef Shop will be decked out in it's holiday charm, with the freezer full with a small amount of holiday beef and some other goodies. Also in the shop I will have two great Holiday Market Vendors. Come down and spend the day with all of us during ... There is something for the whole family!

First start the day with a little post Thanksgiving run with the , then enjoy good eats, shopping and small town charm. It is such a magical day in Alma. We hope to see you there!

❤️UPDATE on Us and the Beef Shop - ❤️
I first want to say Thank You for your support and love for our business over the last couple years! I have explained in past post we are are making a pivot to this business and have lots of transitions happening at once. I also noted that we would be closing in December, however after reviewing our inventory and looking ahead at our schedules I have decided to go ahead and close now.

You see Arturo will be having knee surgery in December and we are in a major planning and preparation mode around here to get things in order for me to be head of all things. Caring for the four legged and two legged creatures will be on my shoulders as Arturo heals.

The small amount of inventory that we do have has been updated on the website(www.pachecobeef.com). We are still shipping, delivering to MHK and Alma areas.

We will have a very small restock in a couple weeks that will include some ribeyes and roast. So stay tuned for that!

The Beef Shop will be closed this weekend!

This weekend, we will not have regular business hours. We will be closed on Thursday, Friday, and Saturday. We apologize for the inconvenience if you were planning to shop with us! We will be back open on October 31st with regular business hours.

Here is one of our favorite Ground Beef Recipes...
Homemade Hamburger Helper

1 lb ground beef seasoned with our Italian Beef Seasoning
1 14.5 oz diced tomato
1 8 oz tomato sauce
2 handfuls fresh spinach just to sneak in some extra veggies. This is optional.
1 tbsp tomato paste
2 tbsp pesto
1/2 lbs bowtie pasta cooked
1 egg
1 cup ricotta
1/2 cup parmesan grated
1 - 1 1/2 cups mozzarella grated
salt and pepper to taste

Preheat the oven to 425 degrees.

Begin by browning the ground beef in a 10” oven-safe skillet on medium and seasoning with our Italian Beef Seasoning recipe.

Once the ground beef is seasoned, add in the tomato paste and let cook for about 1-2 minutes.

Then add in the tomato sauce, diced tomatoes, and pesto. If you would like to sneak in some extra veggies, before adding the tomato sauce, puree a couple of handfuls of spinach in the tomato sauce then add to the ground beef.

Once the tomato products and the pesto are combined, stir in the pasta.
Whisk the egg and add to the ricotta. Season the ricotta and egg mixture with salt & pepper to taste. Combine the mozzarella and parmesan.

Spread the ricotta mixture on the top of the beef, tomatoes, and pasta. Then top with the mozzarella and parmesan mixture.

Bake at 425 for 30 – 45 minutes until the cheese is browned on top.

Pivot...We are pivoting around here. December 14th will be the last day of regular hours for our little Beef Shop. See why below! 👇👇

Why? You might ask. There are lots of reasons why, lots of factors that played into making this hard decision, but the biggest reason why is we have a significant demand for beef shares and we are not in a spot in our operation where we can keep up with the shares demand and inventory in the shop. We also have decreased foot traffic, so it makes sense to give the people what they want and focus on selling beef shares instead of cuts. Also, our boys are growing so fast and are involved in things pulling us in many directions; flexibility on Saturdays is needed in the season of life.

We are incredibly grateful for the support we have received over the last almost four years. We are not going away, just pivoting. We also still plan to be involved in things such as Shop Small Alma and Flint Hills Feast.

After-school activities are in full swing around here. From piano to football practice to 4-H meetings, we are running most nights of the week. My favorite hack is to start a roast in the slow cooker before the day begins. That way, I have my protein done. Sometimes, we do a classic pot roast (Recipe below) or make hot beef sandwiches or tacos. Either way, I have a hot meal for my hungry boys! Win-win!

You know what my favorite thing about having a freezer full of beef is the options it provides when making a grocery list for the week. We put a lot of beef on our weekly menu because it is there, and it is one less thing I have to think about buying at the grocery store. So, beef cuts are how most of our meals start.

So it has been a hot minute since we have shown up here! I am sorry for that. Life has been a little wild, messy, and wonderful all at the same time!

Let me catch you up…
July flew by with checking cattle, fair, and shipping of grass cattle at the end of the month.

In August, we went on vacation, which was WONDERFUL…. Please take me back to the mountains. Then the boys started school, and we settled into the school routine.

September so far - Calving season has begun! YAY! And Arturo re-injured his knee, not so YAY!

We are still selling Beef; however, our inventory is a little limited right now because of the demand for beef shares!

What is a beef share? It is beef in bulk basically: a quarter of beef (100 lbs); half a beef (200 -250 lbs) or a whole beef (500 - 550 lbs)

Let us know if you are interested in purchasing this type of beef. We would be honored if you could fill your freezer with Pacheco Beef.

The Beef Shop is still open and stocked with ground beef, roast, stew meat, short ribs, and minute steak. Our hours are Thursday and Friday, 11-5, and Saturday, 11-3.
