Slow Cooker Pot Roast with Mashed Potatoes & Veggies
A comfort food classic that hits every single time!
📝 Ingredients :
For the Pot Roast:
3–4 lb chuck roast
1 tbsp olive oil
1 onion, sliced
4 garlic cloves, minced
1½ cups beef broth
1 tbsp Worcestershire sauce
1 tbsp tomato paste (optional, for richer flavor)
1 tsp dried thyme
1 tsp dried rosemary
Salt & pepper to taste
Veggies (added to roast):
3 large carrots, peeled and chopped
3 medium potatoes, peeled and cubed
Optional: 1 tsp Italian seasoning
For the Mashed Potatoes:
4 large russet or Yukon gold potatoes, peeled and chopped
½ cup butter
½ cup milk or heavy cream
Salt & pepper to taste
🍽️ How to Make It :
1️⃣ Sear That Chuck Roast:
Pat roast dry and season generously with salt and pepper. Sear in olive oil on all sides until browned—this locks in flavor. It’s a flavor-sealing move and a slow-cooker game-changer.
2️⃣ Load the Slow Cooker:
Place roast in the slow cooker. Add onions, garlic, broth, Worcestershire, tomato paste, herbs, carrots, and potatoes. Cook on low for 8 hours or high for 4–5 hours until fork tender. This is the ultimate low-effort win and a meal that makes the house smell amazing.
3️⃣ Make Creamy Mashed Potatoes:
Boil chopped potatoes in salted water until fork-tender. Drain and mash with butter, milk, salt, and pepper. Get them extra fluffy for that creamy comfort hit and side dish superstar status.
4️⃣ Shred the Beef & Serve:
Once cooked, remove roast and shred with two forks. Place back in slow cooker to soak up juices. Serve hot over mashed potatoes with a ladle of that rich, herby gravy. This is a weeknight dinner hero and a leftover goldmine.
5️⃣ Garnish & Dig In:
Sprinkle with dried parsley or fresh herbs if desired. Serve in a deep bowl and don’t forget extra gravy. You’ve got a soul-hugging, cozy classic on your plate.
