Congratulations to Rhet Ketchum of Downing, Missouri, whose love for food and hands-on learning earned him top honors in 4-H and the Missouri State Fair!
Rhet milled Soft White Wheat using Royal Lee Organics equipment for his 4-H flour milling project, winning a blue ribbon at the Scotland County Fair and then Best in Show at the 2023 Missouri State Fair! 🏆✨
He didn’t stop there. Rhet also baked a delicious Pineapple Zucchini Bread using our Royal Lee Organics recipe and earned another blue ribbon at the county fair. 🍍🥒🍞
Out of more than 3,500 projects statewide, Rhet’s poster, milled flour, and bread were chosen as one of only four entries to represent the “Healthy Living” project area in the 4-H Building in Sedalia.

Figuring out how to substitute fresh ground flour for store-bought flour in a recipe can be challenging! There are several factors to consider when determining the right proportions. Keep in mind that fresh ground flour tends to absorb more liquid and is denser than its store-bought counterpart. A good rule of thumb is to start with ¾ cup of fresh flour for every cup of store-bought flour.
