Trees and bushes are bare of fruit and leaves now, but we've still been busy freeze-drying tasty, crunchy snacks! The apples are locally grown on our trees or friends' trees that haven't been sprayed, and the banana chips are from organic bananas. I have a batch of mixed berries drying right now, and if you're interested in checking out freeze-dried candy, we have Skittles, Werther's caramels, and Nerd Clusters. I also bought several varieties of dye-free candy that I'm excited to try when my current fruit batch is done!
I need to dive more into the mechanics/science of how freeze-drying works, but it involves some heat (120 degrees for the fruit), but also cold (-10 degrees), and creating a vacuum. In the end we have very dry food on trays that are hot to the touch, but yet the inside of the unit has 1-2 inches of frost built up inside it next to the hot trays. It's a neat machine!
