Our poor broilers had a wild night. I don’t know what the wind gust was, evidently high enough to move our chicken tractors. We only had 1 casualty and it was from them huddling up and smothering the little guy.

Someone asked for this recipe, so here it is.

Zucchini Breakfast Casserole

Ingredients:
1 Medium Zucchini
6 Bacon strips
1 Small Onion
3 Garlic cloves minced
12 Eggs ( depends on the size of dish you are using)

Chop zucchini, onion, garlic, and add to your dish. Cover everything in olive oil.
Season to your liking.
Bake at 400 degrees for 15 mins.

While that’s baking, cook your bacon. Once it’s cooled and you have pulled our dish out of the oven, chop your bacon and add to your dish.

In a separate bowl, add your eggs.
I make this two different ways. Sometimes I beat the eggs together and sometimes I leave them unbeaten.
Once you have your eggs ready, add them to your casserole and gently stir.

Place back into the oven and cook for 20-30 minutes or until your casserole is firm.
