We’ve got the ingredients for this delicious frittata. Cooks up quick in the toaster oven too!
2 fingerling potatoes, 1/4 of a jumbo onion, 1 zucchini all sliced thin and sautéed toss in a crushed Clive of garlic towards the end. Season with salt and pepper
Whisk up some eggs 6-8 and season.
Butter you baking dish add your veggies and pour the eggs over the top. Top with thin sliced tomato (I used the one that I forgot to eat last week), some shredded Parmesan cheese, and cracked pepper bake at 400 for 15 min. Sprinkle with fresh herbs if you like.
