STUFFED PEPPER CASSEROLE

Ingredients

1 pound ground beef
2 bell peppers, chopped
1 onion, finely chopped
3 cloves garlic, minced
1 Tablespoon Worcestershire Sauce
1 (15 oz) can low sodium beef broth
1 (15 oz) can diced tomatoes
1 cup uncooked long grain white rice
1 Tablespoon Italian seasoning
1 teaspoon salt
1/2 teaspoon black pepper
3/4 cup Mozzarella cheese, shredded
3/4 cup cheddar cheese, shredded

Instructions

In a large skillet cook the ground beef, breaking apart. Once it is mostly cooked add in the onions and bell peppers and cook for 5-10 minutes until they start to soften.
Add the garlic to the beef mixture and cook for a minute or two, just until you can start to smell it.
Sit in the rest of the ingredients, except the cheese, and bring the mixture to a boil.
Cover and reduce the heat to a simmer and cook for about 20 minutes, stirring half way through.
Once the rice is tender, stir in about 1/2 of the cheese until it is melted and incorporated with the beef and rice.
Sprinkle the rest of the cheese over the top, put the lid back on the pan and let the cheese melt. If you are in a hurry, you could put your pan under the broiler (if it is oven safe) to melt it faster.

Pot Roast with Potatoes and Carrots 😋😍

A comforting, hearty dish that brings all the flavors together in a tender, melt-in-your-mouth roast. Perfect for family dinners or cozy nights at home.

Ingredients:

1 (3 lb) boneless chuck roast
2 Tbsp olive oil
Salt and freshly ground black pepper
1 large yellow onion, coarsely chopped
3 cloves garlic, minced
1 (14.5 oz) can beef broth
3 large potatoes, peeled and cut into chunks
4 large carrots, peeled and cut into 2-inch pieces
2 sprigs fresh rosemary (or 1 tsp dried rosemary)
2 sprigs fresh thyme (or 1 tsp dried thyme)
1 cup red wine (optional, for extra flavor)
2 tbsp all-purpose flour (optional, for thickening the gravy)
Instructions:

Prepare the Roast:

Heat the olive oil in a large pot or Dutch oven over medium-high heat. Season the chuck roast generously with salt and pepper.
Sear the roast in the hot oil on all sides until browned, about 4-5 minutes per side. Remove the roast and set aside.
Sauté the Vegetables:

In the same pot, add the chopped onion and garlic. Cook, stirring occasionally, until softened, about 3-4 minutes.
Deglaze and Add Broth:

Pour in the beef broth (and wine, if using), scraping the bottom of the pot to release any browned bits. Return the roast to the pot.
Add the rosemary and thyme. Bring to a simmer.
Roast in the Oven:

Preheat your oven to 300°F (150°C). Cover the pot with a lid and place it in the oven. Let it cook for about 2 hours.
Add the Vegetables:

After 2 hours, add the potatoes and carrots to the pot, making sure they’re submerged in the broth. Cover and cook for an additional 1-1.5 hours, or until the roast is tender and the vegetables are cooked through.
Thicken the Gravy (Optional):

Ingredients:
For the Honey Pepper Chicken:
2 boneless, skinless chicken breasts
Salt and pepper to taste
1 tablespoon olive oil
1/2 cup honey
1/4 cup soy sauce
1 tablespoon apple cider vinegar
1 teaspoon ground black pepper
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/4 teaspoon ground cayenne pepper
For the Creamy Macaroni Cheese:
8 ounces macaroni pasta
2 tablespoons butter
2 tablespoons all-purpose flour
2 cups milk
2 cups shredded sharp cheddar cheese
1 cup shredded mozzarella cheese
Salt and pepper to taste
Chopped parsley for garnish
Directions:
Start by seasoning the chicken breasts with salt and pepper. Heat olive oil in a skillet over medium heat and cook the chicken until golden and cooked through, approximately 6-7 minutes per side. Once done, remove the chicken from the skillet and set it aside.
In the same skillet, combine honey, soy sauce, apple cider vinegar, ground black pepper, garlic powder, onion powder, and ground cayenne pepper. Allow the mixture to simmer until slightly thickened, stirring occasionally, for about 2-3 minutes.
Slice the cooked chicken into strips and return them to the skillet with the honey pepper sauce. Coat the chicken evenly with the sauce and set it aside while you prepare the macaroni cheese.
Cook the macaroni pasta according to the package instructions, then drain and set it aside.
In a separate pot, melt butter over medium heat. Stir in the flour and cook for about 1 minute, stirring constantly. Gradually whisk in the milk until smooth. Continue to cook, stirring constantly, until the sauce thickens, approximately 2-3 minutes.

Homemade Mexican Pizza 🍕🌮

Ingredients:
- 1 pound lean ground beef
- 1 packet (1 ounce) taco seasoning
- 1/2 cup water
- 6 medium flour tortillas
- 1 can (16 ounces) refried beans
- 1 can (10 ounces) red enchilada sauce
- 1 cup shredded cheddar cheese
- 1 cup shredded pepper-jack cheese
- 1 Roma tomato, diced
- 1 green onion, diced
- 1 small can sliced black olives

Instructions:
1. Preheat oven to 375°F. Spray two baking sheets with non-stick spray. Place 3 tortillas on each sheet.
2. Bake the tortillas for 3-5 minutes, flip them, and bake for another 2-5 minutes until golden and crispy. Set aside.
3. In a skillet, cook and crumble the ground beef over medium-high heat. Drain the grease.
4. Add taco seasoning and water to the beef, bring to a boil, then reduce heat to medium-low. Simmer for 10 minutes and set aside.

Instructions:

1. Heat the Milk: Pour the milk into a pot and heat it over medium heat. Stir occasionally to prevent burning.

2. Prepare the Egg Yolks: In a small bowl, beat the egg yolks until smooth.

3. Add the Egg Yolks to Milk: Once the milk starts to boil gently, reduce the heat. Slowly add the beaten yolks to the milk while stirring continuously to avoid clumping.

4. Curdle the Milk: Add 1–2 tablespoons of lemon juice or vinegar to the mixture. You’ll notice the milk curdling, and the cheese solids will separate from the whey. Add more acid if needed for better separation.

1 1/2 cups all-purpose flour
1/2 cup old-fashioned oats
3/4 cup brown sugar, packed
1/2 tsp baking soda
1/2 tsp salt
1 tsp ground cinnamon
1/2 cup unsalted butter, melted
1 tsp vanilla extract
For the Pumpkin Filling:
1 cup pumpkin puree (not pumpkin pie filling)
1/2 cup granulated sugar
1 large egg
1 tsp ground cinnamon
1/2 tsp ground nutmeg
1/4 tsp ground ginger
1/4 tsp ground cloves
1/2 tsp vanilla extract
1/2 cup evaporated milk or heavy cream
Instructions:
Preheat your oven to 350°F (175°C). Line an 8x8-inch baking pan with parchment paper, leaving some overhang for easy removal.
In a large bowl, combine flour, oats, brown sugar, baking soda, salt, and cinnamon. Add melted butter and vanilla extract, stirring until the mixture forms a crumbly dough. Press about two-thirds of this mixture into the bottom of the prepared baking pan to form the crust. Reserve the remaining mixture for the crumble topping.
In another bowl, whisk together pumpkin puree, granulated sugar, egg, cinnamon, nutmeg, ginger, cloves, vanilla extract, and evaporated milk (or heavy cream) until smooth and well combined.
Pour the pumpkin filling over the crust, spreading it evenly. Sprinkle the reserved crumble mixture over the top.
