These Seared Scallop Tostadas with Mango Avocado Salsa are perfect for pool days, spring and summer hosting, or sharing with friends. Crispy, fresh, and packed with flavor — plus a little seafood goes a long way. 🥭✨
Ingredients
Scallops
• 1 lb scallops
• 2 tsp salt
• 3 tbsp butter
• 2 garlic cloves, minced
Mango Avocado Salsa
• 2 mangos, chopped
• 3 scallions, chopped
• 1 avocado, chopped
• 1 handful cilantro, chopped
• Zest + juice of 2 limes
• 2 tsp chili seasoning
• 2 tsp garlic powder
• 1 tsp salt + pepper
Tostadas
• 5 tortillas
• Cooking spray
• Salt
Directions
1. Make the tostadas: Using a cookie cutter, cut 8 circles from tortillas. Place on a parchment-lined baking sheet, spray both sides with cooking spray, sprinkle with salt, and bake at 400°F for 10 minutes until crispy. Set aside.
2. Make the salsa: Mix mango, scallions, avocado, cilantro, lime zest + juice, chili seasoning, garlic powder, salt, and pepper. Place in the fridge while you cook the scallops.
3. Cook the scallops: Heat a pan over medium-high heat and add enough olive oil to coat the bottom (about 3–4 tbsp). Once shimmering, add scallops and sear for 2 minutes on one side. Lower heat, flip, remove excess oil carefully with a paper towel, add butter + garlic, and baste for 1 minute.
Want to grill instead?
Pat scallops very dry, lightly oil, and grill over high heat for 2–3 minutes per side until lightly charred. Don’t overcook!
4. Assemble: Top crispy tostadas with mango avocado salsa and scallops — and enjoy!
