Today I’m making canned crushed tomatoes.
8 pounds, which what I had ripe, only makes 4 pints. Next week, I hope to have 21 pounds or more to can.
It’s a real process, let me tell you! Wash,,blanch off the skins, peel, core and quarter. Then you seed them and put into a pot. Cook for 20 mins,add salt, then cook for an hour to reduce. After that you can and water bath.
And this is why I never sell or give away my canned tomatoes. You cant pay me for the work involved….
