Hey all, we had a confluence of things come up that mean we won't be at the Elgin Farmers’ Market today and won't have our store open Friday or Saturday this week.

Sorry for the inconvenience! If you have preorders with us or want to grab stuff from Haciendo Coffee Roasters | Air Roasted In Texas or Coyote Creek Farm , no worries, those deliveries are still happening as scheduled! 😁

We're a little short on grass hay for a few days so in the meantime, they boys are getting tree hay!

This stuff was cut from bushy weeds and trees. It's their favorite. 😁

Big if true! We need to spread some mushroom compost in the garden again.

A new study from Chiang Mai University found that soil amended with just 15% spent oyster mushroom (Pleurotus spp.) substrate reduced root-knot nematode gall formation by 85-90% in chili crops. Oyster mushroom mycelium actively traps and digests nematodes using specialized loop-like structures and nematicidal metabolites, essentially hunting the very pests that devastate yields. Critically, this treatment didn’t harm soil bacterial diversity.

In fact, it boosted populations of health-promoting microbes like Actinobacteriota and Acidobacteriota. For growers looking to close the loop on mushroom cultivation, the byproduct may be just as valuable as the harvest itself.

LOOKY HERE! 👀

We're proud to announce we are seed oil-free and are now working with to let the world know! 🙌

What does that mean? Well, we don't use common inflammatory and ecologically problematic vegetable seed oils like palm, canola, soybean, safflower, or similar oils in any of our foods. Just olive oil, butter, lard, and tallow! 😁

We also use only organic flour in our bakes (preferably , which is locally milled from wheat grown mostly in Texas and Oklahoma) and use mostly grass-fed butter.
