budget bowls part 1: chili oil garlic butter noodles

Ingredients

* About 100 g somen noodles (around 1/3 of the package)
* 2 tbsp butter
* 3 cloves garlic, minced
* 2–3 green onions, sliced
* 1 tbsp oyster sauce
* 1 tsp dark soy sauce
* 1–2 tsp peppercorn chili oil (add more if you like it spicy)
* A couple tablespoons of the noodle water

Directions

1. Bring a pot of water to a boil and cook the somen according to the package directions (usually about 2–3 minutes).
2. Before draining the noodles, scoop out about 1/4 cup of the cooking water. Drain the noodles and rinse them quickly with cold water.
3. Melt the butter in a pan over medium-low heat. Add the garlic and cook for about 30 seconds until it smells good. Don’t let it burn.
4. Stir in the oyster sauce, dark soy sauce, chili oil, and about 2 tablespoons of the noodle water. Mix everything together.
5. Add the noodles and toss until they’re evenly coated in the sauce. If they seem dry, add a little more noodle water.
6. Stir in most of the green onions and save a few for the top.
7. Serve right away with a little extra chili oil and green onions if you want.
