The love/hate relationship i have with a cheesecake 🤣

There’s something about the challenge of it that I love. You can make the same recipe 200 times and still never know 100% if it’s going to set up.

The weather changes. You mix two seconds too long. The water bath isn’t quite right. The cream cheese isn’t room temp. The eggs act different. So many little things matter.

But when it sets and slices clean.. 👏
