Nasimo stands for "Never assume someone isn't a masterful overcomer", these are the words that form this brand and saved the life of Chef Gerald McCoy. The name combines Naomi and Simone his two loving daughters and the words signify his triumph over a 25-year addiction. He found solace in their names during a heavy night of gambling, nearly losing it all, and finally, he made the choice to change for the love of his wife, children, and his craft. Then is when NaSimo was born.

Chef McCoy's years of culinary experience as well as instructing in the culinary arts led him to create a fusion of cultural foods and classic traditional dishes into new versions for today. His versatility in culinary styles is profound. Nasimo Food Project also caters to multiple events and occasions and prides itself on the love that's put into every creation. It also has outreach programs giving back to the community because Chef McCoy believes that where much is given much should be given in return.
