Matcha isn’t tea you steep and toss, it’s the whole leaf, ground into a fine powder, which is the real reason it tastes and feels different from a regular cup of green tea.
That feeling is what gets people. Instead of a jolt and a crash, matcha tends to hold steady, which is why so many coffee drinkers end up switching over without meaning to.
Not all matcha is made the same way. First harvest, shade time, and where it’s grown all change what ends up in your cup.
I run Yōko Matcha as a small, women-led business, named after my grandmother who spent her life practicing the preparation of tea. Everything we make comes from Honyama in Shizuoka, Japan’s tea country, picked at first harvest and tested before it ever reaches a tin.
