I’ll never forget the first recipe I made with fresh milled flour — pancakes. 🥞
I had spent years trying to find gluten-free or “healthier” versions of pancakes that didn’t leave me feeling awful. But they never tasted quite right… and I honestly thought I’d have to give up things like pancakes forever.
Then I discovered home milling. I got my hands on a grain mill and some wheat berries, ground my first batch of flour — and made pancakes.
You guys… they were so good! 🤤
Even my husband said, “Regular pancakes just don’t do it for me anymore.” That’s when I knew we were onto something.
Fluffy, satisfying, and best of all — my body felt amazing after eating them. It was the moment I realized this was going to change more than just my kitchen — it was going to change how we felt about food.
