What possibilities await with all those fresh Roma and Ruskin tomatoes from the last Market? I turned Taco Tuesday into a flavorful celebration by making my own pico de gallo with a kick from serrano peppers, and the Roma tomatoes and Ruskin were a perfect addition to our lazy chicken enchiladas and Mexican rice.

Heres the recipe if you dare to try.

Yield: 1 Quart

2lbs Roma tomatoes, cores removed and small dice

1/2 a white or res onion, small dice (rinsed under cold water to mellow the flavor)

4 tsp cilantro, chiffonade

4tsp lime juice, fresh squeezed

1-2 serrano chile, stemmed and minced amount depends on how hot you want it

4tsp sea salt

Combine all ingredients in an appropriately sized container.
Mix thoroughly and let the salsa marinate for about 30 minutes. This allows the flavors to meld and intensify.
Taste and adjust as needed. Want more lime? A little extra salt? Go for it!

** the inside of the tomatoes can be use in a home mexican rice.

Unfortunately, this weekend's Market on Saturday, 3/8, will not take place due to a lack of sign-ups and adverse weather conditions.

We will host the event again on 3/22. Prospective vendors may register using the link that will be posted on our page this Sunday.

Just a FYI to all. Weather is looking a little ifie for Saturday. 97% chance of thunderstorms in the morning and afternoon.

This weekend was amazing once again.

It has come to our attention that there is some confusion surrounding the Market's location. Our initial plan was to operate from two locations: 1979 Harrietts Bluff Road (Huck's RV area) and Harrietts Bluff Park. However, after consulting with vendors and assessing factors such as park rental costs, we decided to retain the Market's current location. We found that more people were interested in visiting the Market near 95 than relocating it seven miles away. Our goal was to provide a platform not only for Bluff residents but also for local artisans to sell their products that live on the Bluff. The park was a desirable option, but the rental costs were not feasible. Our future promotional materials will reflect the address near Huck's RV.
