Slow Cooker Taco Chicken and Rice

4 boneless, skinless chicken breasts
1 cup long-grain white rice (185 g)
1 can black beans (15 oz / 425 g), drained and rinsed
1 can corn (15 oz / 425 g), drained
1 can diced tomatoes with green chilies (10 oz / 285 g)
1 packet taco seasoning (about 35 g)
1 cup chicken broth (240 ml)
1 cup shredded cheddar cheese (100 g)
1/4 cup fresh cilantro, chopped (15 g)
Salt and black pepper, to taste
Preparation Steps
Place the chicken breasts in the bottom of the slow cooker.
Sprinkle taco seasoning evenly over the chicken.
Add black beans, corn, diced tomatoes with green chilies, and rice.
Pour in the chicken broth and gently stir around the chicken.
Cover and cook on low for 5–6 hours or on high for 3–4 hours, until the chicken is tender and the rice is fully cooked.
Remove the chicken and shred it using two forks.
Return the shredded chicken to the slow cooker and stir everything together.
Add shredded cheddar cheese and let it melt for a few minutes before serving.
Garnish with fresh cilantro and season with salt and pepper to taste.
