Well hello from besutiful Bathurst! We’re back in the land of Oz, and ramping back up again. For some reason too difficult for me to work out, i’ve had to rebeand and start anew on social media. From Scratch with Cath is where you can find me on facebook and instagram. We get to Sydney about once a month and have already cooked up for a couple of customers. A quick caesar salad for tonight’s dinner. The thing with this type of salad is you can have all the components ready to go - think crispy bacon, garlic croutons, toasted pinenuts, washed lettuce - and dinner is ready in a flash. Our leftover roast chicken was the perfect addition!

‘Use what ya got’ for dinner!

2 loaves of bread were wasting away in the freezer, so they went into a low oven for a few hours to dry out before grinding up into breadcrumbs in the thermomix (8secs spd 6).

There was a small portion of steamed spinach in the freezer, half a tub of sun dried tomatoes in oil, and half an onion taking up fridge space. Chop chop chop, mixed with some breadcrumbs, salt, pepper, grated cheese for a quick stuffing. The flavoured oil binds it all together.

Stuff this into any thin steak or chicken fillet before placing in a greased oven dish. These I’ll bake for about 35 mins with a bit of foil to cover. An easy yummy dinner served with a selection of steamed veg.

Being diabetic, a savoury, filling breakfast with plenty of veg sets Hapi up for the rest of the day. The bowl of berries and coconut yoghurt finishes brekkie off deliciously well.

What’s on the plate? 3 egg omlette with Trunkey Bacon and Pork and cheese, coleslaw, avocado, and a fresh veg salad.
