Important Considerations

The process of making ceremonial cacao paste involves several careful, traditional steps to preserve the integrity, flavor, and spiritual significance of the cacao. Here's a simplified outline of the process:

1. Harvesting Ripe cacao pods are hand-harvested from cacao trees. The pods are opened, and the cacao beans (seeds) are scooped out along with the surrounding pulp.

2. Fermentation The beans are fermented for several days (typically 3–7 days) in wooden boxes or banana leaves. This step is crucial for developing the complex flavor and reducing bitterness.

3. Drying After fermentation, the beans are sun-dried for about a week. Proper drying ensures they don’t mold and helps lock in flavor.

4. Roasting The dried beans are lightly roasted to bring out their aroma and flavor. Ceremonial cacao is usually roasted at lower temperatures or sometimes not at all, to retain more of the natural compounds and nutrients.

5. Winnowing The roasted beans are cracked, and the shells are removed, leaving just the cacao nibs.

6. Grinding The cacao nibs are stone-ground (traditionally using a metate or large stone grinder) into a thick, oily paste. No additives (like sugar or emulsifiers) are included — this is 100% pure cacao paste.
