1️⃣ Sweet Chili Sauce

Ingredients:
1/3 cup rice vinegar
1/3 cup water
1/3 cup + 2 tbsp sugar
1 tablespoon rice wine
2 tsp dried chili flakes
1 1/2 tsp minced garlic
1 tsp finely minced ginger
1 tsp soy sauce
2 teaspoons cornstarch dissolved in 1 tablespoon water (the sauce will thicken more once cooled)

Place all of the ingredients except for the cornstarch mixture in a small saucepan and bring it to a boil, stirring regularly. Once the sugar is dissolved stir in the cornstarch mixture, stirring continually until thickened, about 1 minute. Let the sauce cool completely, pour into an airtight jar and store in the refrigerator. Will keep for up to a week. Makes about 1 cup.

2️⃣Chili Garlic Oil

Ingredients:
1 cup neutral oil (vegetable, canola, or peanut oil)
¼ cup dried chili flakes (adjust for spice level)
6 cloves garlic, finely minced or sliced
1 small shallot, finely chopped
1 tbsp soy sauce
½ tsp salt
1 tsp sugar
½ tsp smoked paprika
1 tbsp sesame seeds
1 small cinnamon stick

Instructions:
Heat the Oil: In a saucepan, heat the oil over low to medium heat until warm but not smoking.
Infuse Aromatics: Add garlic, shallots, cinnamon stick. Cook gently until the garlic turns golden brown (about 3-5 minutes). Stir constantly to prevent burning.
Add Chili Flakes & Spices: Turn off the heat and immediately stir in the chili flakes, salt, sugar, paprika, and sesame seeds. Let it sizzle and infuse.
Add Soy Sauce (Optional): Let it cool for a minute, then stir in soy sauce if using.
Cool & Store: Allow the chili oil to cool completely before transferring to a clean jar. Store in the fridge for up to a month.
Perfect for dumplings, noodles, fried rice, or as a dipping sauce!

3️⃣Honey Garlic Glaze Recipe

Ingredients:
½ cup honey
¼ cup soy sauce (low sodium preferred)
4 cloves garlic, minced
1 tablespoon rice vinegar or apple cider vinegar
1 tablespoon cornstarch (mix with 2 tbsp water)
1 teaspoon grated fresh ginger (optional, for added depth)

Instructions:
Mix: In a small saucepan, combine honey, soy sauce, garlic, vinegar, and ginger.
Simmer: Bring to a gentle simmer over medium heat. Let cook for 4–5 minutes, stirring occasionally.
Thicken (optional): If you prefer a thicker glaze, mix cornstarch with water to make a slurry and stir it into the saucepan. Cook 1–2 more minutes until it thickens.
Cool slightly and brush over meat or vegetables near the end of cooking, or serve as a drizzle.

4️⃣Sweet and Sour Sauce

Ingredients:
½ cup pineapple juice (or water)
¼ cup rice vinegar (or white vinegar)
¼ cup ketchup
⅓ cup brown sugar (or white sugar)
1 tablespoon soy sauce
1 tablespoon cornstarch
2 tablespoons water (for slurry)

Instructions:
Combine liquids: In a small saucepan over medium heat, whisk together pineapple juice, vinegar, ketchup, sugar, and soy sauce.
Make slurry: In a small bowl, mix cornstarch with 2 tablespoons water until smooth.
Thicken: Once the sauce comes to a gentle boil, stir in the cornstarch slurry. Keep stirring until the sauce thickens and turns glossy (about 1–2 minutes).
Use or store: Remove from heat. Use immediately for dipping or stir-fry, or let it cool and store in a sealed jar in the fridge for up to a week.
This goes perfectly with fried chicken, pork, shrimp, or as a dip for spring rolls and wontons.

5️⃣Teriyaki Sauce

Ingredients:
1/2 cup soy sauce
2 tbsp brown sugar
1 teaspoons fresh ginger ,minced
1 tbsp garlic ,minced
1 tablespoon honey
1 teaspoon sesame oil
3 tablespoons mirin
1/4 cup water mixed with 3 teaspoons cornstarch

Instructions
Combine base – In a small saucepan, whisk together soy sauce, water, brown sugar, rice vinegar, and mirin.
Add aromatics – Stir in garlic and ginger. Bring to a gentle simmer.
Thicken – Mix cornstarch with water, then whisk into the sauce. Stir until sauce thickens (about 2–3 minutes).
Finish – Remove from heat, stir in sesame oil if using.
Cool & store – Let it cool before storing in a jar. Keeps up to 1 week in the fridge.

For glaze consistency, use less water and simmer longer. For marinade style, keep it thinner.

6️⃣Sweet & Spicy Orange Sauce

Ingredients:
1 tbsp orange zest
2 tbsp soy sauce
¼ cup honey or sugar
2 tbsp rice vinegar
2 tsp chili flakes
2 garlic cloves, minced
1 tsp grated ginger
1 tbsp cornstarch
2 tbsp water

Instruction:
1. Mix the slurry. In a small bowl, stir together cornstarch and water until smooth. Set aside.
2. Combine main ingredients. In a saucepan, add: orange zest, soy sauce, honey or sugar, rice vinegar, chili flakes, minced garlic, grated ginger.
3. Heat the sauce. Place the saucepan over medium heat and bring the mixture to a gentle simmer, stirring occasionally.
4. Thicken. Once simmering, pour in the cornstarch slurry while stirring continuously.
5. Simmer until glossy. Cook for 1–2 minutes until the sauce thickens and turns shiny.
6. Adjust & Serve. Taste and adjust sweetness, heat, or tang as needed.
Use immediately or let cool and store.

Restaurant‑style Tandoori Masala powder that works well for tikka, kebabs, and tandoori veggies.

Ingredients (yields ~½ cup)
Whole spices
~ 3 tbsp coriander seeds
~ 1½ tbsp cumin seeds
~ 1½ tsp black peppercorns
~ 2 pieces cinnamon (about 2 inches total)
~ 8 green cardamom
~ 2 black cardamom
~ 4 cloves
~ 2 small blades mace (javitri)

Ground spices & herbs
~ 2 tbsp Kashmiri red chilli powder (for colour, low heat)
~ 1 tsp regular red chilli powder (optional, for extra heat)
~ 1 tsp turmeric powder
~ 1½ tbsp dry ginger powder (saunth)
~ 1 tsp garlic powder (optional but nice for marinades)
~ 1½ tsp amchur (dried mango powder) or skip and add lemon in marinade
~ 1½ tbsp kasuri methi, lightly crushed
~ ½ tsp black salt (gives slight tikka masala vibe; adjust to taste)
~ ¼ tsp grated nutmeg

Method
Dry roast whole spices
` Heat a tawa/kadai on low–medium flame.
`Add coriander, cumin, peppercorns, cinnamon, cardamoms, cloves, mace.
`Roast, stirring, 2–3 minutes until aromatic and lightly deeper in colour (don’t burn).
`Switch off and cool completely.

Grind
`Transfer cooled whole spices to a masala grinder and grind to a fine powder.
`Sieve if needed, re‑grind coarse bits and mix back.
`Mix with ground spices
`Add Kashmiri chilli, (optional) regular chilli, turmeric, ginger powder, garlic powder, amchur, crushed kasuri methi, black salt, and nutmeg to the ground whole spices.
`Whisk or shake in a jar until everything is evenly combined.

Storage
`Store in an airtight glass jar in a cool, dark place; use within 3–4 months for best aroma.

How to use (basic marinade ratio)
For about 500–700 g paneer/chicken/veggies:
`2–3 tbsp tandoori masala
`¾–1 cup thick curd
`1½ tbsp ginger‑garlic paste
`1–1½ tsp salt (adjust, since masala already has some black salt)
`1–2 tbsp lemon juice or vinegar, 1–2 tbsp oil, optional extra kasuri methi.
Mix, marinate at least 1–2 hours (overnight for meat), then cook on tawa, oven, air fryer, or grill

*MASH POTATO BAJIA*
Boil and mash 3 potatoes, add 3 tblsp lemon juice, 2 tblsp green chutney,1 tsp salt, heat mustard seeds and curry leaves with a bit of oil and add to the potatoes. Form in to balls and leave to rest.
Make a chana flour paste with 1 cup chana flour, ½ tsp salt, 1 tsp red chillies and 1 tsp dry dhana, add enough water to make a runny consistency. Dip potato balls into paste and fry.

*CHICKEN BAJIA*
3 pieces chicken fillet (cubed)
1 potato (cubed into small pieces)
2 tbsp red ginger-garlic masala
5 tblsp lemon juice
Steam and leave to cool.
In a dish grate 1 onion and 1 tomato, add 2 tsp salt, 2 tsp dry dhana, 1 tblsp green masala, ½ tsp arad, 1 cup chana flour, 1 cup cake flour, chopped greens, mix everything together, add little cold water to make a thick batter, before frying add 1 tsp baking,powder. Fry in deep oil on medium heat.

*POTATO BAJIAS*
2 potatoes (boiled and sliced)
Make batter with...
1 cup chana flour
½ cup cake flour
3 tblsp vinegar
1 tsp salt
1 tblsp green masala
Greens
Pinch of arad
1 tsp dry dhana
Mix batter ingredients together, dip potatoes into batter and fry in shallow oil.

*MUGNI DAAR BAJIAS*
2 cups mugni daar
½ tsp bicarb
2 onions
Green chillies to taste
2 onions chopped
Chopped green dhana
Chopped spring onions
1 tsp baking.powder
2 tsp ground dhana
Salt to taste
Soak daar with bicarb overnight. Rinse well and spread on a clean cloth to drain. Mince daar with 2 onions and green chillies. Mix in the remaining ingredients and drop teaspoonsful into hot oil, fry until cooked and light brown

*BHAJIAS*
1 bunch dhana
2 bunches methi bhaji
3 cups cubed onions
round green chillies
2 1/4 cups chana flour
1/2 cup roti flour
salt,red chilli powder
2 1/2 tsp baking powder
3 medium potatoes...

Cut ur chicken fillets into strips or cubes
Marinade in lemon juice
salt
ginger
garlic
green chillies
if u want red put in tandoori masala or red masala paste
then plain flour
gram flour
baking powder
ajmo seeds
hyder
Coriander fresh

mix all together
Add water & fry

*Sweetcorn bhajias*

Plain flour
gram flour
baking powder
ajmo seeds
hyder
coriander
garlic
green chillies
salt
put methi bhaji fresh
spinach
sweet corn
mix with water

*PIZZA BHAJIAS*
Half cup cubed g pepper, half cup cube onions , half cup tomatoes or polony, half tsp baking powder , 10 spring onions chopped, 1 tsp salt , half bunch dhania, half cup or more water , 3/4 cup flour, 8 green chilli sliced, 1 tsp garlic, 1 tsp b pepper n half tsp mixed herbs.

Mix all the above ingredients to make thick batter. fry spoon fools in deep hot oil..
