Raw Cheese Benefits - Part 1
Let’s talk about why raw cheese is so great.
Raw cheese is a fermented and cultured food that begins with excellent quality, safe, raw milk. On its own, the raw milk contains enzymes and beneficial bacteria – all good for your digestion and your gut.
To make raw cheese, we slowly heat the milk to to 32 degrees and then culture the raw milk by encouraging the proliferation of already present beneficial bacteria by using a clabber, we also add whey carried over from the previous batch.
This is to naturally use the good bacteria in the whey to start the fermentation in the new batch
Which makes our cheese unique and one of a kind.
The culturing heightens the probiotic levels and therefore adds to the probiotic benefits.
