🍜 Cauliflower and Mushroom Ramen Bowl

🥢 Looking for a wholesome Thursday supper idea? This Cauliflower and Mushroom Ramen Bowl is warm, nourishing and packed with flavour — the perfect way to end a busy day.

Made with veggie-based noodles, mushrooms, bok choi, carrots, eggs and a comforting broth, it’s a satisfying meal the family can enjoy together.

👨‍👩‍👧‍👦 Serves 3-4
⏱️ About 1 hour

📝 Ingredients List:

4 eggs
4 cups (1L) vegetable or beef broth
2 carrots, peeled and julienned
200g baby marrows, julienned
250g Live Well cauliflower and turnip noodles
100g shimeji mushrooms
100g shiitake mushrooms
100g bok choi
4 spring onions, thinly sliced
Salt and milled pepper
1 fresh red chilli, sliced
Coriander, to garnish (optional)

👩‍🍳 Method:

- Boil the eggs to your liking. Allow to cool, then peel and halve.
- Heat the broth, add the carrots and allow to simmer for about 5 minutes. Add the baby marrows and noodles and simmer for another 4–5 minutes.
- Heat a glug of olive oil in a pan and fry the mushrooms until golden in colour. - Remove from pan and set aside.
- Halve the bok choi and fry on the cut sides for about 3 minutes in the same pan.
- To assemble, use tongs and divide the cauliflower and turnip noodles equally in serving bowls. Pour over broth and veggies and top with mushrooms and bok choi.
Season and garnish with chilli and coriander, if using. 🌶️🌿

🍛 Pick n Pay Recipe: Anjali’s Ultimate Butter Chicken

🥶 Cold-weather comfort with rich, creamy flavour. This yoghurt-marinated butter chicken is simmered in a delicious, comforting curry sauce and served with your favourite flat bread or rice. 🫓🍚

👨‍👩‍👧‍👦 Serves 4
⏱️50-55 minutes

📝Ingredients List

½ jar Patak’s Butter Chicken Paste
2 tbsp thick Greek yoghurt
4 chicken thighs, skinless and
boneless, cut into large bitesize pieces
2 tbsp butter
1 large onion, finely chopped
75g tomato puree
75g passata
150ml heavy cream
1 tsp oil
Fresh coriander, roughly chopped, for garnish

👩‍🍳 Method

• In a bowl, mix the yoghurt and 2 tbsp Butter Chicken Paste. Add in the chicken and coat. Cover and refrigerate overnight.
• The next day, heat a BBQ or griddle pan until smoking. Cook the chicken until charred on all sides. Remove from the heat and brush with a little butter
• In the meantime, make the butter chicken sauce by gently heating the oil with the remaining butter. Fry the onion for 5 minutes.
• Add the remaining Butter Chicken Paste, sweet smoked paprika and 100ml of water. Stir well and cook for 5 minutes.
• Stir in the tomato puree, passata, cream and 150ml water. Simmer for 15 minutes. Add the charred chicken and allow to cook for 5 minutes.

Serve garnished with coriander and your favourite flat bread or rice🌿
