โจ Cozy, healthy, and full of flavour! this hearty lentil soup is your go-to comfort food๐๐ฟ
Ingredients:
2 tbsp olive oil
1 onion, chopped (white, brown, or yellow)
2 garlic cloves, minced
1 large carrot, chopped (about 1 1/4 cups)
2 celery ribs, chopped (about 1 1/4 cups)
2 cups (400g) dried lentils (green or brown), rinsed
400g crushed tomato
1.5 litres (6 cups) vegetable or chicken stock (low sodium)
1/2 tsp cumin powder
1/2 tsp coriander powder
1 1/2 tsp paprika
2 dried bay leaves
1 lemon (zest + juice)
Salt & pepper to taste
Method:
1. Heat oil in a large pot over medium heat. Add garlic and onion, cook for 2 minutes.
2. Add celery and carrot. Cook for 7โ10 minutes until softened, and the onion turns sweet. This step builds the flavour, so donโt rush it.
3. Add the remaining ingredients except lemon and salt. Stir well.
4. Increase heat and bring to a simmer. Skim off any scum from the surface. Cover with a lid, reduce heat to medium-low, and simmer for 35โ40 minutes until lentils are soft.
5. Remove bay leaves. Lightly blend using a stick blender (2โ3 quick pulses) to thicken, or blend 2 cups separately and return to the pot.
6. Adjust consistency with a little water if needed. Season with salt and pepper.
7. Finish with lemon zest and a squeeze of juice. Garnish with parsley and serve with freshly baked bread and butter.
