Superfoods make superb soups! Warm up your belly and your soul with our Creamy Avocado Soup. Will you be trying our recipe?

INGREDIENTS:
2 ripe Avolands avocados, seeded and diced
4 cups chicken stock, divided
¼ cup fresh lime juice
¼ cup coriander
2 green onions, green part only (no stems)
1 clove garlic
1 teaspoon sea salt
¼ teaspoon ground cumin

Optional toppings: diced avocado, toasted pumpkin seeds, chilli oil, croutons, crispy bacon or coriander.

METHOD:
1. Place the chicken stock, lime juice, coriander, avocados, onion, garlic salt and cumin into a food processor and blend until smooth.
2. Warm the soup by transferring it into a pot and heat it on medium heat. Do not bring it to a boil.
3. Serve immediately or top with any of the optional toppings before serving.
4. Enjoy the creamy goodness!
