The Ultimate Matcha Bake

Ingredients
2 cups Health Connection Wholefoods Gluten-Free Self-Raising Flour
2 tbsp Health Connection Wholefoods Matcha Superfood Mix
3 ripe bananas (mashed, plus one for topping)
1/2 cup maple syrup or honey
1/4 cup melted coconut oil
2 eggs (or flax eggs for a vegan option)
1 tsp Health Connection Wholefoods Vanilla Extract
Method
Preheat your oven to 180°C and grease a loaf tin.
In a large bowl, whisk together the mashed bananas, oil, syrup, eggs, and vanilla.
Sift in the gluten-free flour and matcha powder. Fold gently until just combined.
Pour the batter into the tin and top with sliced banana.
Bake for 45 to 50 minutes until a skewer comes out clean.
