Olga’s Chicken Schnitzels + creamy avocado + salad = wrap perfection 🥑✨ Perfect for tacos, wraps, or lunch on the go!

INGREDIENTS:

1 x pack Chicken Schnitzels
12 small tortillas
½ cup Praise aioli
2 limes
1 cup red cabbage, finely shredded
1 avocado, sliced
1/4 cup coriander, chopped
1 tbsp chilli oil
Salt and pepper, to taste

METHOD:

✨Preheat the air fryer to 200°C. Spray the chicken schnitzels with olive oil and place them in the air fryer basket in a single layer. Cook for 10-12 minutes, flipping halfway through, until golden and crispy. Remove from the air fryer and season with salt.

✨In a small bowl, mix together the aioli and the juice and zest of 1 lime. Season with salt and set aside.

✨In a medium bowl, toss the shredded red cabbage with a splash of olive oil and a pinch of salt.

✨Warm the tortillas in a dry skillet over medium heat for 30 seconds on each side. Slice the cooked chicken schnitzels into strips. Spread a dollop of lime aioli on each tortilla. Add a few strips of chicken schnitzel on top. Top with the shredded cabbage, sliced avocado and a drizzle of chili oil. Serve with lime wedges on the side.

Hot Honey Chicken Burgers

Serves 6

Ingredients
1 pack Chicken Patties
6 brioche buns
Capilano Hot Chilli Honey
Praise Mayonnaise
½ head iceberg lettuce, shredded

Method
1. Preheat your BBQ or grill. Place the chicken patties on the BBQ. Smash them gently with a
spatula and cook until crispy on the edges and fully cooked through.
2. While the patties finish cooking, place the brioche buns on the grill to toast lightly. Drizzle
the hot honey over each cooked patty and assemble on the buns with mayonnaise and
shredded lettuce.

Chicken Caesar Smash Tacos 🌮🔥
We are loving this spicy version with chicken patties and a creamy spicy Caesar made by

Ingredients (makes 4–5 tacos)
Chicken and Tacos
– 4 chicken patties
– 4–5 small flour tortillas
– 1 tbsp olive oil
Spicy Caesar Salad Mix
– ¼ cup mayonnaise (we used )
– 1 tbsp hot honey (), adjust to taste
– 1 tsp Dijon mustard
– 1 tsp Worcestershire sauce
– 2 garlic cloves, grated
– Salt and pepper to taste
– Handful of chopped lettuce
– Grated parmesan

1. Heat a non-stick pan with olive oil.
2. Spread each chicken patty onto a flour tortilla pressing lightly. Place the tortilla, patty-side down, onto the hot pan and cook. Flip carefully to cook the other side.
3. While the chicken cooks, mix the lettuce, parmesan and all spicy Caesar ingredients in a bowl until well combined.
4. Assemble the tacos by topping each cooked smash patty with the Caesar salad mix. Fold,bite and enjoy.

Lamb Chevapchichi Triangles served with Spiced Yoghurt Dipping Sauce made by the fabulous , who has kindly shared her recipe below:

Ingredients:
- 1 Medium Onion chopped fine
- 20gms Salted Butter
- 1 Garlic Clove crushed
- 1 tsp Ground Mixed Spice
- 1/2 cup Toasted Pine Nuts
- 500gms Lamb Chevapchichi mashed with fork
- 1 spring Onions sliced finely
- 1 tsp Harissa
- Salt & Pepper to taste
- Filo Pastry ( was used in this recipe)
-3/4 cup melted butter for assembly

Method:
- Toast pine nuts & set aside
- Melt butter in frying pan
- Add onions and cook till softened
- Add garlic, spice, Harissa, salt & Pepper stirring constantly
- Add Spring Onions stir till softened, then set aside
- In the same pan cook the Lamb constantly stirring and breaking up to smaller pieces - once it’s changed colour add all other ingredients and stir through.

Assembly:
Depending on the size of the triangles you like:
- Cut pastry sheets in half lengthways for large triangles or in 3 lengthways for smaller triangles. You will need 2 strips per triangle. Tip 💡You need to work fast as fill pastry dries out quickly
- Brush 1st strip of pastry with butter and top with second strip, brush with butter also
- Place a spoonful of mixture at the bottom of the buttered strip and fold diagonals across to form a triangle. Keep folding till you get to the top. Repeat until you have used up all the mixture.
-Brush the top of each triangle with melted butter
- Bake in the oven for 10 - 12 mins or until golden brown and crispy on around 180 - 200 degrees

Spiced Yoghurt Dipping Sauce

Mix together

- 1 Cup of thick Greek Yogurt
- 1 tsp Ground Cumin toasted
- 1 tbsp Honey

Cheesy Chicken Sausage Rolls

Serves: 4

Ingredients
1 pack Country Style Chicken Sausages
3 sheets Pampas Puff Pastry
½ cup Bega shredded cheese
1 egg, beaten
Black or white sesame seeds, to garnish

Method
1. Preheat oven to 180°C fan-forced. Line a baking tray with baking paper.
2. Thaw pastry sheets until just pliable, then cut each sheet in half lengthways.
3. Place one sausage along the short edge of each pastry half and sprinkle with a little shredded cheese alongside the sausage.
4. Roll up tightly to enclose the filling, placing the seam underneath.
5. Arrange sausage rolls seam-side down on the prepared tray.
6. Brush with egg wash and sprinkle with sesame seeds. Bake for 20–25 minutes, or until
puffed, golden and cooked through. Cool slightly before slicing and serving.
7. Perfect served warm with tomato sauce, chutney, or a simple side salad

One Tray Chicken Orecchiette Pasta Bake 🍝✨ made with Chicken Yiros - as created by and Chef on !

Hearty and full of flavour, this is a great meal prep option! Get it made and pack it into containers throughout the week. It’s great to eat cold, too!

Recipe: Eddie Noble | Serves 6-8

Equipment:

1 x deep baking tray

Ingredients:

2x 500g packs Chicken Yiros meat
1x 500g pack Orecchiette
1 Lt Chicken stock/stock powder
2 x carrots (finely chopped)
1 x onion (finely chopped)
4 x celery sticks (finely chopped)
100g grated Pecorino or Parmigiano
1x sliced chilli
8x sliced garlic cloves

Method:

1. Preheat oven to 200°c fan, with the baking tray in the oven.
2. Dice all vegetables.
3. After 10 mins, remove the baking tray from the oven and add in Chicken Yiros meat.
4. Add in all your other ingredients and give it a really good mix.
5. Cover tightly with foil.
6. Place back in the oven for 35-40 mins.
7. Once cooked, allow to rest for 5-10 mins.
8. Grate over the cheese and serve.
