The Stockman’s Table has secured an incredibly rare, premium high-IMF lamb and from this Saturday, we will be one of the only butchers in Australia where you can get your hands on it.

IMF stands for intramuscular fat: the fine marbling running through the meat. Just as marbling separates exceptional Wagyu from ordinary beef, high IMF transforms lamb, delivering extraordinary tenderness, deeper flavour and a rich, buttery eating experience unlike conventional lamb.
