Salt Kitchen Charcuterie Our priority is flavor, it is the determining factor whenever we make a product or develop something new.

Established in 2014 by former chef and Ballarat native Michael Nunn, Salt Kitchen Charcuterie has been created to use the amazing produce from Western Victoria to make charcuterie by hand. We’ve done our homework, we’ve spent time in the UK and France to aquire knowledge, skills and learn these ancient methods to make our products. Based in Ballarat we source pigs from Western Plains Pork in Mount

Mercer. Female pigs have been grown free range to a specific size to make our products. Our philosiohy is to ustilize the entire carcass and we make fresh sausages, hams, bacons, terrines and dry cured products from our pigs. We use beef from Sher Wagyu in Ballan to make pastrami, bresaola and fresh sausages. We want our products to have provenance and be an expression of our region. We want for you the customer to know you’re buying a Western Victorian product.

We’d like to take the opportunity to say thank you to all of our customers, suppliers and distributors for all of your support this year. That’s a wrap from us at Salt Kitchen Charcuterie for 2025, we’ll be taking a break for Christmas and returning on Monday 12th January. Wishing everyone a very Merry Christmas and we look forward to an equally delicious 2026!

Joyeax Noel, Buon Natale, Feliz Navidad, it’s Christmas 2025. We’re in full swing now with our Christmas preparation and we have a range of hams and charcuterie selections for this years festive season. Orders are now open and we are offering the following for collection only from our Delacombe(Ballarat) facility:
- Whole bone in Christmas hams(about 6kg) $170
- Teardrop hams(about 1.4kg) $45. - Small charcuterie box $60
- Large charcuterie box $120

Great night last week to celebrate 10 years of Salt Kitchen Charcuterie. It was amazing to have so many people in the room that have had such an impact on where we are today as a business. A special thank you to our producers Judy and Tim from and our distributor Sally from for being there. Thanks to Matt Freeman and his team from for the space and service, to chef Andre McLoughlin for his help with the food, thanks to Troy from for the wine, to BT from for the local beer and John Harris for the Sparkling wine. Thank you to all of our amazing staff both past and present for being there and to our friends, family and customers for making it a special night.

Big thank you to the Salt Kitchen Charcuterie team for all of their hard work this year. Really lucky to have such a great team of people that turn up everyday dedicated to improve and produce great product. This year we were treated to delicious food and drinks from , we appreciate you looking after us as we celebrated Christmas and the year that was.
