There's a particular kind of golden you only get in late autumn. It sits in a jar on our shelf.

Our Winter Blossom Honey is gathered when the bees have been busy on the cool-weather bloomers. Those quiet little flowers that show off when nobody else can be bothered. The result is a honey that's mellow, floral, and gentler than its summer cousins. Carefully sourced from local beekeepers.

A tip: stir a spoonful into your evening tea, drizzle it across a hunk of sharp cheddar, or just have a teaspoon when the world's been a bit much. Won't fix everything. Will fix more than you'd think.

Friday afternoon and the cheese board is calling.

Honey, in its most honest form.

Our wild hand-cut honeycomb is exactly that. Cut straight from the frame, wax and all, with nothing added and nothing taken away. The bees built it, capped it, and we simply popped it in the jar.

Spread a piece on warm sourdough with butter, drop a chunk onto a cheese board next to a sharp cheddar, or stir it through warm porridge and let it slowly melt.

Let's talk afternoon tea. Our Rooibos Raspberry and Vanilla blend is what I'd call a properly grown-up cuppa.

Rich red rooibos from South Africa, woven through with sweet raspberry and a whisper of soft vanilla. No caffeine, no fuss, and naturally sweet enough that you'll find yourself reaching for the sugar bowl far less often.

Sunday is the last day of autumn. Can you believe it?

We've had a glorious one this year. Those red and golden leaves around Berrima, the proper crisp mornings, the first stews back on the stove. Winter is rolling in next week and I, for one, am ready.

What actually makes Manuka special?

Not all honey is the same. Manuka is made by bees collecting nectar from the flowering Manuka bush. What sets it apart is its naturally occurring antibacterial activity, measured by its MGO (Methylglyoxal) rating. The higher the MGO number, the greater the concentration.

Lower MGO ratings are perfect for everyday enjoyment; higher ratings are often sought for more targeted use. Ours is 100% Australian, raw, single-region and cold-extracted, and every batch is lab-tested for MGO authenticity.
