Blondie more often than not develops various shades of blue spots on the rind due to the variety cultures added during cheesemaking and the environmental conditions in which she matures. We love how the different moulds create depth and complexity to her flavour. This is typical of her European counterparts and what’s great about artisan small batch cheesemaking! Little food market Melbourne is the next lucky food show to see this rare cheese.
