Something different this week at Ashgrove, Mick’s going for the duck legs!!!

Duck legs in a blood orange glaze, pomegranate molasses and a little bit of lime zest in there just to give it that little kick of freshness.

Mick says to throw them in the oven (I’d say gently place in the oven) a little bit lower, about 160C for around 45 mins and then turn up the heat at the end - for the perfect quackle 🤣

We’re excited to launch a special collaboration between Meat at Billy’s and renowned chef Martin Boetz of Short Grain.

Martin is best known for pioneering modern Thai cuisine in Australia through his iconic restaurant Longrain and now through his Brisbane restaurant, Short Grain. Martin approached Billy to help create a unique pork sausage for use in his restaurant, combining Martin’s expertise in bold Thai flavours with Billy’s sausage-making experience.

This vibrant Thai Red Curry Pork Sausage sausage will be served on the menu at Short Grain and, for a limited time, will also be available for retail sale through all three Meat at Billy’s stores.

Best grilled.
Brush with coconut oil while cooking.
Serve with Short Grain Sweet Chilli Sauce.

Last week I joined Martin Boetz at to start work on Trial 1 of a Thai red curry pork sausage. Using Martin’s experience and expertise with incredible fresh Thai flavours, I put my sausage-making skills to work.

It’s always great to step outside the butcher shop and into a restaurant setting. It was a breath of fresh air and a real motivation boost to work alongside someone as knowledgeable as Martin, and to work outside my usual comfort zone.

These sausages will be featured on the menu at Short Grain in the coming weeks, but I thought I’d also ask our followers: would you like us to work towards making them available in store at Meat at Billy’s so you can cook them yourself at home?

State of Origin night at Meat at Billy’s means Beefy’s!
We didn’t make the rules… you guys started it and honestly, we’re not mad 🤣 It makes sense though. Beefy’s Pies are the best pies out there and they make Origin night pretty quick, simple and easy.

Just reheat in a 180°C oven for 40–50 mins and dinner is sorted.

MEAT DELIVERY - but do it differently...

We already have 700+ customers getting their meat delivered in one of these ChillyBillys (swap in / swap out) around Brisbane.

WHAT IS A CHILLYBILLY?????

The NoStyro Project came about after a lot of sleepless nights wondering how best to remove styrofoam boxes from our delivery process. It was essential that the solution didn’t sacrifice the things that styro is really good at (keeps meat really cold, sturdy, long lasting) and didn’t simply replace styro with another form of ‘single use waste’ that still requires disposal or recycling eg. insulated cardboard etc. It eventually became apparent there really wasn’t anything suitable on the market so in true Meat at Billy’s style, Billy decided to create his own solution… the ChillyBilly!

The ChillyBilly is our own custom made cooler that’s been manufactured right here in Australia and can be swapped in/out with each delivery. It does everything that styro does … keeps meat really cold, long lasting, sturdy BUT is much better for the environment in that it is reusable, over and over again. Plus, we think it looks pretty cool too 😉

The NoStyro Project is our ChillyBilly exchange membership program. Instead of your home delivery order being packed in a styrofoam cooler box, you can now choose to opt in by paying a once off $33 fee, and have your deliveries packed in your very own – ChillyBilly cooler.

Your ChillyBilly is yours to keep between orders. Use it as you like – picnic, beach, Saturday sport, camping, wherever! When you choose to join the NoStyro Project, you choose black to go green!
