They won't always tell you if their kraut is actually probiotic. 3 signs to check: 1) kept at room temperature = 0 live bacteria, 2) vinegar in the ingredients = pickled, not fermented, 3) a heat sealed lid (sucked in) = it's been heated, killing the bacteria. Look for kraut with living probiotics that's never been heated, or make your own.

I left supermarket sauerkraut and our living kraut on the bench for 2 weeks, no fridge. Ours kept fermenting and creating CO2 as a byproduct, billions of live probiotics, so much pressure it overflowed the jar. The supermarket jar did nothing, it's pasteurised, dead before it hit the shelf. Alive or dead, that's the real difference in fermented food.

Fourteen days ago I intentionally wiped out my gut microbiome, and I still don't know if it was worth it. It started with a tick, spider or thorn on a hike six weeks ago that turned into a flesh-eating bacterial infection after two weeks of me ignoring it. Antibiotics from my first GP visit as an adult saved me and wrecked my gut. Now rebuilding with bone broth and 6 serves of fermented food a day. What would you have done?

Every culture in the world traditionally eats ferments regularly. A normal dinner at The Spice Delight in Richlands turned up three: plain lassi (fermented milk), raita (fermented dahi with veggies), and achaar (fermented salty lime). You don't need a jar of kraut for fermented food, it's already on the menu.

Pre, pro, post, and zombie, here's the whole thing in one breath. Prebiotics feed what's already there. Probiotics are alive, right now. Postbiotics are the good stuff that bacteria produce. Zombiebiotics are the dead bacteria that might still benefit you. Four words, four different jobs.

Today I'm killing bacteria on purpose. Heating kills every living bacteria in a spoonful of kraut, so by definition that's no longer probiotic. Scientists call what's left a paraprobiotic, or zombiebiotic. Dead cells, intact structure, and early research says even that can still trigger a gut response.

That sour tang in kraut isn't just flavour, it's proof of something the bacteria actually made. As they eat the cabbage, they produce short chain fatty acids, lactic acid and glutamic acid (+more) along the way, that's a postbiotic: a beneficial byproduct of fermentation. So this jar isn't just prebiotics and probiotics, it's got postbiotics too.

This jar is fizzing right now because there are billions of living things inside it. Probiotics are the actual living bacteria, not food for them, the bacteria themselves. But not all survive your stomach acid to reach your gut, which is why strain and dose matter more than "live cultures" on a label.

This garlic has zero bacteria worth talking about. So why eat it every day for gut health? Prebiotics aren't bacteria, they're food components your body can't digest (but your bacteria can). Not food for you, it's food for the bacteria already living in your gut. Onion, garlic, banana, oats, they all work the same way.

Prebiotics are fibre that feeds your gut bacteria, probiotics are the living bacteria itself, postbiotics are what they produce while fermenting, and zombie biotics are heat-killed bacteria that can still trigger a gut response. One jar of kraut actually has three of the four in it at once.
