Over two beautiful nights, we welcomed our wonderful Clubbers for our Q2 event! Each event, we bring out the best of the Cheese Room. It’s a fun, informal night full of cheese chatter! All our favourites are back in store, including cheese exclusively imported for us, featuring gorgeous small format goats cheeses, washed rind, semi firm mountain cheeses and our aged British hard cheeses.

Shorter days and cool nights remind us to stock up on raclette, dust off the fondue pot, and prepare for indulgent nights in. Long Paddock’s Banksia is the perfect cheese for your raclette night, we are super happy with the consistent condition, outstanding quality and heady cheesy aromas of it especially under the hot grill.

Montgomery’s Cheddar is another perennial winter favourite here at the shop, it’s rich earthy and crumbly paste warms our hearts.

We have been aging some of the cheddars purchased over Christmas for a little longer to see how they would react in the new cheese room.

We have now opened two of the four - the first was Granite from Long Paddock and this is the second. Bay of Fires from the Tassie West Coast.

Like any aging environment, there will be unique flavour profiles developed in our Cheese Cave, and we can’t wait to see what that looks like in the coming months. But what we are seeing now is the first ✅ and that’s an environment in which the cheeses are thriving. See the Bay of Fires tasting note below.

Ian Fowler’s multi-award-winning Tasmanian cheddar, finished in our cave at Cornelius. The tropical fruit character that develops here is remarkable, classic cheddar bones with a bright, exotic pineapple finish.
