๐ซโจ DOUBLE CHOCOLATE HAZELNUT CHEESECAKE (VEGAN & NO-BAKE!) โจ๐ซ

๐ง INGREDIENTS
โจ BASE
โข 300g chocolate sandwich cookies
โข 75g vegan butter
โจ CHEESECAKE LAYER
โข 180g raw cashew nuts (soaked)
โข 250g coconut cream
โข 160g dark chocolate, chopped
โข 60ml melted coconut oil
โข 60ml maple syrup
โข 25g cocoa powder
โข ยฝ tsp vanilla extract
โข Pinch of salt
โข 20g desiccated coconut
โจ TOPPING
โข 100ml whipped dairy-free cream
โข Extra dark chocolate, chopped
โข 2 tbsp chopped hazelnuts
๐ฉโ๐ณ HOW TO MAKE
1๏ธโฃ Soak cashews overnight or in boiling water for 30 minutes. Chill coconut milk overnight and scoop out the thick cream.
2๏ธโฃ Line and grease a 20cm round tin.
3๏ธโฃ Blitz cookies into crumbs, mix with melted vegan butter, then press firmly into the base of the tin. Refrigerate while making the filling.
4๏ธโฃ Melt dark chocolate and allow it to cool slightly.
5๏ธโฃ Blend soaked cashews, coconut cream, melted chocolate, coconut oil, maple syrup, cocoa powder, vanilla, and salt until completely smooth and creamy.
6๏ธโฃ Pour the filling over the base and smooth the top evenly. Freeze for at least 6 hours or until fully set.
7๏ธโฃ Before serving, top with whipped dairy-free cream, chopped hazelnuts, and extra chocolate ๐ซโจ
