What We’re Loving This Week at Shane’s 🐟

Broadbill Swordfish

Another incredible local game fish, just like the Mahi Mahi we featured last week. This beautiful Broadbill Swordfish steak has been cut from a 67kg fish caught just off Sydney Heads.

Swordfish has a mild flavour with firm, white, meaty flesh, making it one of the best fish for cooking on the barbecue or grill. It holds together beautifully and develops a delicious caramelised crust while staying juicy inside.

Simple is best with this one — a little olive oil, sea salt, cracked pepper and a hot grill. 🔥

Mahi Mahi is in season now through to May – and it’s an absolute cracker!

Caught by local commercial game fishermen alongside big pelagic species like Tuna, Swordfish and Marlin, this is premium, ocean-fresh fish at its best.

Mahi has a firm, lean flesh with a mild-to-sweet flavour that works beautifully across so many dishes – from fresh ceviche to baking.

But if you ask us? 🔥
It’s best done on the grill. A little olive oil, sea salt, cracked pepper and a squeeze of lemon… simple and perfect.

Beautiful local Snapper, individually line-caught and lovingly ike-jime (brain spiked – you’ll notice the small puncture just above the eye 👁️).

This traditional Japanese method results in:

Sticking with our beautiful local species, these absolute crackers are hand-lined caught straight out of the Hawkesbury River.

It doesn’t get much better than that 👌

Sand Whiting are prized for their delicate, sweet flavour and light, flaky flesh — arguably one of the best eating fish in Australia. Simple, fresh and seriously delicious.

They’re fantastic cooked whole on the BBQ or in the pan… but if you ask us? Our go-to is battering or crumbing them for that classic golden crunch. Fish & chips night done right 🙌

Ever noticed the dark “thumbprint” on its side?

Legend says that before becoming an apostle, Saint Peter was a humble fisherman. When he pulled this striking fish from the sea, he gripped it firmly with his thumb — leaving behind a permanent mark. That’s why in many places John Dory is also known as St Peter’s Fish.

Story or not… it’s one of the most recognisable fish in the ocean 👀

✨ Why we love it:
• Beautiful firm, pearly white flesh
• Mild, slightly sweet flavour
• Lovely large flakes
• Perfect pan-fried with crispy skin

🐟 How to cook the perfect fillet of fish 🐟

Pat fish dry before cooking — it helps you get that golden, crispy skin instead of a soggy pan situation.

Easy Crispy Skin Fish

✔ Pat fish dry with paper towel
✔ Season with salt & pepper
✔ Heat a pan with a splash of oil until hot
✔ Place fish skin-side down and don’t move it
✔ Cook until skin is golden and crisp, then flip for 30–60 seconds

Finish with a squeeze of lemon and serve with salad or chips.
Easy, quick, delicious 🙌

We’re happy to humanely prepare the lobster for you, making it easy to take home and cook with confidence.

👉 How to cook
Eastern Rock Lobster is incredibly versatile and works beautifully in classic dishes like lobster mornay or lobster thermidor.

But honestly? We think it shines best when kept simple.

✨ Our favourite ways:
• Boiled whole – perfect for sweet, clean lobster flavour
• Cut in half and cooked flesh-side down with plenty of butter on the grill or BBQ

👉 Top tip
Don’t overcook it! Lobster is at its best when just cooked through — tender, juicy and full of flavour.
